Lately I’m loving roasted squash and zucchini - and zucchini is supposedly great for fighting inflammation; both are low-carb foods.
A little olive oil, mixed salt (and pepper), 425 for 10-ish minutes and they melt in your mouth. They are great cold or warm. I packed them in a to-go container with @traderjoes High Protein tofu and balsamic drizzle. Today I had them over eggs (mix with egg whites and they become fluffy!).
Want something sweet? Add cinnamon and roast!
