I’ve long been a fan of Maria’s incredible cooking and I was very excited when I learnt she was opening a place on my doorstep (albeit temporarily). As soon as we arrived, we were met with such a warm welcome from @zsophiamolnar and @ambrus.paroczai, who greeted us though we were old friends! They got us sat down and with a glass of Italian red in hand we perused the menu, salivating just from reading the delectable descriptions. The menu is Mediterranean sharing style and the food arrives as it is ready. We went for the scrumptious hummus with perfectly cooked spiced carrots and warming harissa, along with a plate of golden moussaka croquettes. Both dishes were incredible but the croquettes really were something else. If you go, you must order these. To follow we had melt in the mouth Oxtail in a rich sauce, complimented with a side of Cypriot style chips. We also had a bowl of fragrant and herbaceous chicken and orzo, packed with citrus flavours and topped with a salty hit of feta cheese. Devine! We didn’t have room for pudding which I was gutted about, but we saw others tucking plates of soft pillowy meringue with quince and mascarpone. Our lunch was so good and I’m sad that the restaurant will only be open until 23rd December. Step up the wonderfully talented chef @mariaelia9 who has recently moved to Suffolk. Maria’s has many TV appearances to her name, has written cook books and has worked at some of the world’s top restaurants, including @el_bulli_. I know she has been itching to get back into the kitchen and the Valentines weekend presented her with an opportunity to kickstart her new Dine at Home service, in partnership with @the_merchants_table in Woodbridge. Maria’s culinary influence comes from her Greek Cypriot father and this shone through in her Valentines Menu... Snacks: The most moorish popcorn I’ve ever eaten (mousakka flavour), cucumber with taramasalta and prawns and hummus with pillowy bread. Starters: Pan fried halloumi with blood orange and fennel. Such a fresh dish which immediately transported me to sitting in a taverna overlooking the Med. Mains: Slow braised ox cheek stifado with creamy polenta, feta and roasted pumpkin. The meat was so soft and pulled apart with little effort. Dessert: Cardamom mahalepi with rose scented rhubarb and baklava nuts, which was the perfect end to the meal. Maria put so much effort and skill into putting this all together. Her hand written instructions and diagrams typified the level of detail she went to to ensure we had a fantastic meal and we sure did! My favourite way with rhubarb might just be this overnight oats that I make every chance I get.. I roast rhubarb with some sugar and mix it plus all the juices with porridge oats, cinnamon, Greek yoghurt, and golden raisins. I’ve also stirred through some of @henriettainman amazing granola which she sent me as a gift, although usually I chuck in some chopped nuts or flaked almonds. Leave overnight in the fridge and it’s the most delicious breakfast I know! Chicken, orzo, tomato, lemon & herb soup by @mariaelia9 • There’s nothing more comforting than a bowl of chicken soup. This is a favourite recipe of mine & a perfect way to use the left over’s from a roast chicken dinner. Based on a recipe from my book Smashing Plates, “Greek flavours redefined”. If Mediterranean flavours aren’t your thing, replace the herbs with coriander & mint, & add a little chopped chilli & fresh ginger if you have some. Serves 2-4 • For the stock: ½ an onion, roughly chopped 2 cloves of garlic 1 celery stalk, optional Parsley stalks Left over roast chicken • Pull any remaining skin from the carcass & discard (Or crisp up in the oven, cool then pound in a pestle & mortar with sea salt & use to flavour popcorn). Pick the meat from the carcass & set aside, place the carcass in a large pan, add the onion, garlic, along with the celery & parsley stalks if you have them. Cover with water & place over a medium heat. Once almost to the boil, lower the heat & simmer for approximately half an hour. Remove from heat, skim the surface of fat & pass through a fine sieve, discarding the vegetables & allow to cool. • For the soup: Glug of olive oil ½ an onion, finely diced 1 clove garlic, finely chopped Pinch ground allspice ½ tsp ground cinnamon ½ litre of chicken stock 100g orzo** 2 large vine ripe tomatoes peeled & diced Handful of reserved chicken meat, shredded 2 tbsp finely chopped mint 2 tbsp finely chopped dill, or 2 tsp of dried 2 tbsp finely chopped flat leaf parsley 1 tbsp freshly squeezed lemon juice Extra virgin olive oil to serve • Heat oil in a medium sized saucepan, add the onion & cook until softened & transparent, add the garlic, allspice & cinnamon & cook for a minute more, add the chicken stock & bring almost to the boil. Add the orzo, tomatoes & chicken, reduce heat so soup is simmering & cook for approximately 8 minutes or until orzo is tender. Add the fresh herbs & lemon juice & season with sea salt & freshly milled black pepper. Serve drizzled with extra virgin olive oil. • 👇continued...

Maria Elia's Smashing Plates residency at Great Guns Social is a must visit when she's next cooking. Piping hot croquettes filled with moussaka, chunky octopus chips with taramasalata, pita soaked in olive oil, charred halloumi (the best I've had - not rubbery at all!), carrot keftedes, moussaka-spiced chicken wings, more octopus served with sweet tomato ragout and soft caper gnocchi...and then dessert which was a Greek twist on trifle with figs and chocolate and baklava nuts. Get a reminder in for next time she's around, seriously. 9.5 out of 10 on the sparkle scale ✨
