La Semaine du cidre du Québec!/ Happy Québec Cider Week! Québec is undoubtably one of the most important cider markets in Canada. One of the top consumption provinces, and with a rich history of cider making there, it is so vital for the Québecois people and for Canada as a whole. Here we have the @lecidre.vhemmingford Cidre du Glace / Ice Cider. A rich 11% fortified offering, that is less cloying/sugary than other types we’ve had, with unique earthy, smoky and herby notes. But it still has that rich, caramelized apple base that is necessary for the style. Ice cider was invented in Québec back in the 80s as a rival to ice wine. Subject to strict laws on production and labeling, it must be made from frozen apples to be called such. Thank you to Québec for being such a strong example for cider in the country, and to @cidreduquebec for being a leader and strong ally to the cider makers and consumers. They recently launched this classification system that puts all cider products in the province into 7 different categories. Recently I completed and passed the @pickcider Level 1 cider knowledge training program and I am now officially a Certified Cider Guide. I’ve spent many hours over the years in orchards talking to cidermakers, and reading cider knowledge books, but I still learned a lot from taking this online course! I am also a level two certified Beer Specialist through the @prudhomme_beer program. They are currently working with @cidercidreca to develop a level 1 course focused on Canadian cider training, so watch their spaces for that. I am now looking towards the future and have started studying towards the Pommelier exam. Did a lovely little @calvados_boulard tasting this week at @gitanes. $9 for 2oz, 0.5oz x 4 choices, was a true winner! Did you know calvados is made with fully fermented cider? Most cider makers in France also make a calvados, so it’s a great way to ensure no product goes to waste and create something truly magical while you’re at it. This flight featured their original Pays D’Auge you can find at the lcbo, their XO (which was so smooth and rich), as well as two cask finished choices - rye and whisky barrels. It’s amazing to see the subtle and large differences the various processes can make. But all truly spectacular to try. We just drank our 5/5 @daughterscider we got last fall and we have to say - wow, do not sleep on this cider maker ‼️ You can find them at Footstep Organics, north of Price Edward County and the 401 in Wooler, and this is an excellent stop on your next journey in the area. We particularly liked this Wild Pair perry. A muddled, juicy pear that has a mild touch of natural sweetness, it somehow tastes both so fresh and also with a satisfying fermented base. Have you ever had an amphora-aged cider or perry? It’s an ancient technique of aging wines in clay vessels that traces back to thousand of years ago. It’s a long lost technique that has seen a revival for the modern times, and that includes cidermakers adapting it to their craft as well. The inside of these terracotta clay pots are very porous, adding a lot of unique characteristics to the liquids within. Here we have the Breccia Perry by @revelcider. If you’ve ever been to their taproom in Guelph, you will have probably seen two massive clay structures at the end of the warehouse. This is their first offering aged in these, a perry, with only 48 cases produced of this. There are a lot of unique notes in this. The pears are most dry, but with a bit of residual sweetness as pears have unfermentable sugars. It starts off dank, funky and sour, becoming warmer as it goes along. It almost becomes a toasted caramelized note by the finish - possibly from the clay. You also get a decent amount of minerality, saline and herby-like notes in this - presumably also from the clay. Here we have the Kerr cider, made with estate grown apples. Featuring creamy apples, it’s very dry and with a bit of earthy and fermentation notes. Flesh-heavy but with peel and some tannins. Sharper acidity helps guide the flavours. Has unique honeydew and saison/pepper-like notes. A tingly, carbonated, dry cider. They have fantastic other cider styles made with lesser known varieties such as creston and silken. Might be the first day of Spring, but you can drink the Harvest Spice by @bonnieheathestate anytime of the year ❤️ If you like mulled ciders, but sometimes find them too bitter or harsh, the Harvest Spice is a lighter but impactful choice. A softer flavour profile allows for the spices to mingle and dance with one another well. In particular, it becomes more cinnamon focused near the finish, and it becomes very warming to the soul. Two unique elements are the orange peel and the lavender added, which makes sense being an amazing lavender farm. The orange comes across as zesty and the lavender is very subtle but helps to enhance the spice/herby profile within. The Devonport by @redislandcider is a hop-heavy cider but not in the way you may expect from an IPA or even many other hopped ciders. Bursting with lychee, starfruit and some citrus notes, the hops are bold but bright and fun – and not bitter. This is one overtly fruity and tropical-oriented hopped cider indeed. The apple base is off-dry, and is secondary to some of the hop notes at times throughout the flavour profile. One final stop we had to make before we left British Columbia and let’s just say we left the best for last. We finally got to visit the idyllic @seaciderhouse just north of Victoria, and it was a pure dream. Having their ciders a few times before, we were decently familiar with Sea Cider before, so we had to make it there for a visit in person. We got both of their taster flights - the classic and the fan favourite- that covered pretty much all of the offerings they had available at that time. From incredible traditional apple ciders like Kings and Spies, to fun, flavoured offerings like their Cherry Lane and Rum Runner - as well as samplers of some of their fortified options like their Black Applejack - it was a broad selection and an education of what makes Sea Cider so legendary. And their estate is just as gorgeous as the ciders. A massive, yet cozy, tasting room so beautifully decorated. An inviting bottle shop. And stunning gardens and views, the fact they are so close to the sea is far from the most impressive aspect about their location. And what we loved is seeing how many strong and passionate women make up their staff. They all took the time for some fantastic chats, and you could really see how they make the place so extra special indeed. Sea Cider is a cidery of pure imagination brought to true life. We are so happy at their success, shipping their products wide and far, including US distribution. But honey berries are also known as haskap so you might be actually be familiar with it! This definitely greets you with a burst of berry flavour that also tastes decently enriched with honey. Have you ever tried a quince cider? To be frank, it’s not really cultivated much in Ontario from our knowledge. And while some say it’s like a pear and apple hybrid, it’s actually impossible to cross these fruits, so it’s it own genus. After chatting with the fine folks at @victoriaciderco, they explained how their Quince Cider was one of their favourites. So off we went to the bottle shop to buy a bottle at like 930pm. And we were not disappointed! Definitely a bit funky. Definitely some fermentation notes. But man, it was still bright and zippy. A lot of juicy quince notes. A fine late night purchase for us indeed. We had a fantastic time at the Ottawa @iheartbeerca festival yesterday. Great to see 3 breweries that brought their own ciders - @1000islandsbrewing, @orleansbrewing/ @burstciders + @cowbellbrewing. And course our friends @ricelakehardcider who brought all three of their mainstay ciders, and were making some epic cider cocktails - the cider sunset with their cranberry and pineapple juice was the bomb! They seriously committed to this festival and will be at all 10 cities on the tour! Great beer from local makers and near local. Really liked trying a few beers from @coldbearbrewco finally. Our group also really liked the @foundersoriginal cocktails you can get at the lcbo. A great festival overall! Enjoyed this @cambiumcider Earl Grey Cider at our hotel room in Sidney! When we were in Victoria, BC, we visited bottle shop extraordinaire, @vesselliquor, which is actually managed by Barry’s childhood best friend from Guelph. They have tons upon tons of premium cider and alcohol options available - It really makes you question our system here in Ontario (but that’s a debate for another day!). Out of the rows and rows of cider available, we found a few from Cambium which all sounded delicious and fun. We decided upon their earl grey option, expecting it to be creamy like the tea. Our expectations were met, with also a hint of tannins and earthiness from the earl grey also. So do visit Vessel in Victoria for way too many ciders to choose from. The Cocorico by @cidresauvageon is a coffee flavoured cider ☕️ that certainly tastes like a freshly brewed cup of coffee infused into a dry apple base. Tannic from the apples and gritty from the strong coffee notes, it certainly will wake up your tastebuds and maybe even you, depending on how much caffeine is in this 🤪😝 Cidre Sauvageon certainly makes a lot of bold, adventurous offerings that many times are sour, funky, and now here in Cocorico, robust. Victoria, British Columbia is home to the oldest operating brewpub in Canada. Affectionately loved by craft beer fans (as we are!), @spinnakersbrewpub is a true institution that has lead the way for over 4 decades now. In recent years, they have branched out and have made a variety of their own ciders too, that are well placed amongst their vast listing of craft beers and spirits. We stopped in and got a window seat looking out into the bay and got to try two of their ciders they had on tap - their House Dry and Mac Attack options. Both crisp as heck, they are deeply refreshing and true “pub ciders” in how easy they are to drink. They do make a variety of types of ciders too, so you may get to try new ones every time you’re in there. We also tried a few beers. I asked if there was any beers they’ve been making since day 1 available, and I was guided to their Mitchell’s Extra Special Bitter, that was full of flavour, with a balanced bitterness and a slight creaminess to it also. We were fortunate enough to sit down with the visionary founder himself, Paul Hadfield, for a long chat about his ciders, his beginnings as a brewpub, and how he has helped countless industry folk along the way - including our own Barry Rooke, who he helped start up @cidercidreca back in its beginnings as a founding board member. This was just such a memorable day. It’s #openthatciderbottle day and we had to go big for it ❤️ Undoubtedly, one of - if not the biggest - cider legend in Canada is the one and only Michel Jodoin. In 1988, @cidreriemicheljodoin opened its ciderhouse in Rougemont, Quebec, and ever since, it has become a domestic and global standard for how good Québec and Canadian cider can be. Here we have their 2019 Cidre rosé mousseaux brut - a 7% rosé cider aged for 15 months, made with the red-fleshed Geneva apple to give it a beautiful, deep colour and body. The mouthfeel is very thick, leading to a vivid burst of red flesh apple notes. Bittersharp, the acidity is forward, adding a heavy crispness to the experience. It does have some natural sugars, but it does become drier as the tasting goes along. Some tannins linger, and add some grit to the experience, but it’s still very easy to drink overall. A very elevated, sparkling option, that I would definitely save for special occasions or today! While on Vancouver Island, we got to try 3 ciders from @valleyciderco - their mixed berry + cherry Noir, their oaked Blanco and their gin botanical Ginnish. All very pleasant and rich ciders that demand your attention and respect for how well they integrate these flavours into their apple bases. We tried two of these @beacon.brewing in Sidney, that had at least 5 of Valley’s ciders available for purchase. The first night we visited Beacon, it was musical bingo, so I of course stumbled in right before the next round started and they made me play. Celebrating Family Day with a great family of ciders, the @lakeshorecider trio! A new Ontario cider maker, you can find their retail store in @algomaorchards1964 in Newcastle, not far from the 401 in the Durham region. They have their still Dockside and carbonated Semi-Sweet and Dry options. What really stood out to us about all three of these ciders are how freshly pressed they taste. You get so much bold apple peel flavour, it tastes like you’re chewing an apple. But also a lot of creamy flesh note too! They are boozy, but one could be understood to think these to be non-alcoholic for how juicy they are. It makes sense coming from a very prominent and respected orchard in the area, these cider apples are coming right from the source. A lovely set of ciders we recommend for easy/drinking options! Living in the core of Ottawa, we don’t make it to the surrounding areas of the city that often. Ottawa is a much bigger city than most realize - it can fit over 4 Torontos by landmass inside, for example. But we decided it was finally time to make the trek to visit @orleansbrewing in the Eastern portion of the city. They not only make excellent beer you can find everywhere in town, they also are the home to @burstciders, after acquiring the brand a couple of years ago. They currently have 3 ciders available. The cranberry and peach options which have been staples of the brand since moving to OBC. They also have a fun seasonal Pear Ginger which of course we had to try in a pint and bring home a couple of bottles 🍐 The Pear Ginger is unique. It’s got a lot of ginger to it, but it’s not as spicy on the palate as others are. It’s more of an earthy root flavour that defines it. The pear backbone is also a bit earthy, being a natural Bartlett-like flavour. We also had a very unique beer that squeamish viewers might want to stop reading right here 👀 Sampling their Ram-a-Lamb-a-Ding-Dong, an ordinary bitter, may not sound weird at first. But in their attempts to brew a historical beer, called a cock ale, they could only get lamb testicles, and therefore they are added during the brewing process. Now, we don’t have any reference point to what flavour notes this may add, but it was a delicious, savoury bitter overall, that you wouldn’t know any difference without reading the fine print. The venue is a beautiful two story industrial brewery, that maybe use to house a mechanics garage? It has a great food menu, which we opted for the fried prosciutto salad and maple flatbread. Love is in the air this week and one cider we fell head over heels for is the @coldcreekvineyards Éirinn Go Brach. Their 2022 version is rich and maybe their driest vintage of this yet. Tuesday is Canadian Agricultural Day and we cannot thank enough all the farmers out there who grow the apples, pears and other fruits we find in our beloved ciders. Many orchardists also make cider, but some just sell their juice to cider makers. One such farmer who grows and makes the cider is Sara Boyd from @lochmorciderco who we’ve seen rocking the big farm machines at her estate. She and her husband Gary make a fantastic Danforth Road series using excellent and many times hard to find cider apples grown on their acres. Getting flights before your flight is really the only way to do it ✈️ Before we hit the airport to depart Portland, we stopped into the Hawthorne @portlandcider taproom for some final Portlander cider before heading back to Canada. This is one fun cider company. They thrive with tons of fun flavours and sophisticated straight apple ciders, all well executed and bright options. Among the types we tried were their Imperial Abby Apple cider made with Belgian beer yeast, Lemon Drop - made with Meyer lemons and elderflower -, a lime, hopped and tangerine cider called Swueeze Play, and their PDX Community Cider featuring donated fruits from the backyards of city-citizens. We also made the effort to stop by because they were featuring a special Femme Magic flight, of 6 different brands that have female cidermakers at the helm. A portion of every flight went towards donating to @pinkbootssociety, to further support the great work of women in the industry. The brands featured were @yondercider, @bandonrain, @baumanscider, @blossombarncidery, @saltcreekciderhouse & Portland Cider themselves! All truly excellent ciders and further proof why we need to elevate the voices and work of women in cider. Portland Cider really does it all. You see them everywhere in the city, on tap, in cans at stores and bars, really just a positive presence anywhere you go. Available in pints, half pints, flights and crowlers to go, they only offered draft cider, but you will 💯 find at least one cider you will like with the great selection. We wanted to do a special post on some wonderful people we met at #CiderCon24. Throughout the week, we got to spend time with the first cider maker in Norway, Áge, who created his first home label cider in 1985, later on founding @ciderhuset. A family run business, his son Gard was also in Portland. Full of stories about their cidery, family and their beloved country, they were absolutely fantastic to get to know and try their ciders. And you could see from the other Nordic cider makers there, they are all so passionate about their craft and collaborative to boost the cider industry as whole. A standout was their Bjor, a 16% cider made with meadow herbs and honey, in which a small bit of honey is added each week to boost the fermentable sugars. We also deeply enjoyed their Vestmann which was a dry, sparkling, elevated offering, that still is easy enough to drink casually, such as with a meal. Their cidery is in Balestrand, Norway, in the west of the country, northeast of Bergen, and they offer meals with pairings, tours and more during the summer months. Two weeks ago today was such an excellent festival we attended in Portland. The Artisans by @cidersummit was an elevated tasting experience bringing together cider makers from Oregon, Washington, California and some international offerings, in a trendy spot that was a mature afternoon of samplings. We couldn’t try them all, but almost everything was a bottle pour of sophisticated choices. Portland is known for many things, but food trucks are one of the major ones. So of course, we had to go! So popular, many food trucks come together to form pods, and many pods are attached to taprooms, bars or breweries. Open year round in most cases, they showcase some of the best street food one can find in the city. We took our business to @cartsidepdx one grey afternoon. Opting for the chicken yakisoba and crab Rangoon from one cart, and the shrimp and grits from another, they were both unreal tasting options. And we mentioned the taproom attached part, right? Of course we got two ciders. 1. @inclinecider - Blueberry Crisp. A very nice medley of blueberry flavours, and we got some maple too? 2. @portlandcider - Mango Mimosa. Any bar with more than 20+ taps is impressive. But @schillingciderhousepdx takes it to the next level with not only 50 taps, but 50 dedicated cider taps 😳❤️ This place is a paradise for cider fans in Portland, Oregon. Not only do they have many Schilling ciders available, but many from the city, state and region. And that night we went, they had a special section of ciders from Michigan, thanks to @michiganciders. Some stand outs were the Black Dog @101cider made with activated charcoal, @tietonciderworks Spiced Pecan and the Orange Dreamcicle from Schilling themselves. They also have a gluten free kitchen with amazing food that is good prices and portions. We got the street tacos and the cheesiest grilled cheese imaginable. Quite possibly the most talked about cider of #CiderCon24, the Quince/Quitten by Italy’s @floribundacider was as dreamy as the bottle’s design and description suggests. This made the rounds at the Bottleshare event, with everyone suggesting to one another to go try it along on the international strip of ciders. We managed to get a bottle to drink in our hotel room after a visit to @the_place_pdx, that was also “the place to be” for cider lovers. Mind you, it was sold out because of the hype but they found a bottle for us in the back. Quince isn’t too common where we are, so really getting to experience this fruit done in an elevated, effervescent way was a real treat. A mild tartness brilliantly mixes with the creaminess of the mouthfeel. One of the best parts of CiderCon and @orciderweek was trying so many international ciders. When the weather impacted so many events, the party went on at @spiritof77bar for the @ciderinstitute party + Japanese cider maker @sonofthesmithhardcider tasting event where they had 3 ciders available to try! We opted for their hopped and their lavender smoked strawberry ciders, and both were true beauties. One of the @orciderweek parties we had too fun at and paid for it the next day was the meet the makers event at @pizzathiefpdx with @yondercider, @seattleciderco, @straycider, @baumanscider & @rawcider With 5 cideries featured, including female-owned @yondercider, we got to have a fantastic chat with the cidermaker from @seattleciderco tasting his 3 green-pepper cider and their fantastic honey crisp cider that is smooth and as crisp as you’d hope. The food was unworldly, with their massive sandwiches and chopped salad that required multiple attempts to finish with leftovers. One spot in Portland, Oregon that really intrigued and delighted us was @doublemountain that has their HQ in the Hood River area, and the taproom in the city that we went to when freezing rain ruined our chances to get out into the countryside. They started as a brewery, and slowly moved into cider. Now however, they make much more cider as it’s proven more popular and the market being less saturated than beer currently. We loved the three we tried- their rosé, their old world Perry “Little Martha” and their foxwhelp single varietal, which for those who didn’t know like us, it is one of the oldest recorded cultivated cider apple varieties. Traditional ciders made trendy and modern, they had a ton of selection and a very fun and large taproom to enjoy them in. Officially Swifties! No, not Taylor. We fell in love with @swiftcider at their production space and taproom in northeast Portland on our tour last week. Being a massive production space for themselves and helping many other cideries and beverage producers in their area, they make fantastic and fun cider that is pushing boundaries and winning hearts along the way. We got to sample a couple of unique ones, including their plump-fruit Blueberry cider and their saison-yeast Pippin single-varietal. They also gave us a fantastic tour of their facilities and answered every single question the group had with a good thoroughness. As they are super supportive of the industry, you can buy their cider and many others at their taproom. You can find them at large all over Portland as well. The @orciderweek kickoff party yesterday at @loyallegionoregon was stellar! 30+ cider taps was a truly glorious sight to see and they had a special you could try 8 very generous pours for only 20 bucks! Some highlights were the last cider ever created by @iamrevnat Swan Song, the @2townscider Chocolate Marionberry, and @swiftcider spicy dill pickle cider!
