Shale Ridge Winery and Cidery - Cherrilicious 📍Thedford, Ontario 🍎Semi-sweet, fruity, juicy, tart, and bright 🍎Primarily tart cherry forward, both on the nose and tongue 🍎Some apple comes in the aftertaste, but it’s subtle, 5% abv ✅9.5/10 This cider has a perfectly natural tart cherry flavour that makes you forget that there is a mild sweetness in the overall profile. It’s honestly got the perfect balance of cherry with apple (which comes through in the aftertaste) and goes down VERY quickly. I am a huge fan of this, and will definitely be looking for whatever else Shale Ridge puts out in the future (as literally everything I’ve tried from them has been impeccable). This cider even made losing (badly) in a game of Scrabble a great time. 🙃
La Semaine du cidre du Québec!/ Happy Québec Cider Week! Québec is undoubtably one of the most important cider markets in Canada. One of the top consumption provinces, and with a rich history of cider making there, it is so vital for the Québecois people and for Canada as a whole. Here we have the @lecidre.vhemmingford Cidre du Glace / Ice Cider. A rich 11% fortified offering, that is less cloying/sugary than other types we’ve had, with unique earthy, smoky and herby notes. But it still has that rich, caramelized apple base that is necessary for the style. Ice cider was invented in Québec back in the 80s as a rival to ice wine. Subject to strict laws on production and labeling, it must be made from frozen apples to be called such. Thank you to Québec for being such a strong example for cider in the country, and to @cidreduquebec for being a leader and strong ally to the cider makers and consumers. They recently launched this classification system that puts all cider products in the province into 7 different categories. Recently I completed and passed the @pickcider Level 1 cider knowledge training program and I am now officially a Certified Cider Guide. I’ve spent many hours over the years in orchards talking to cidermakers, and reading cider knowledge books, but I still learned a lot from taking this online course! I am also a level two certified Beer Specialist through the @prudhomme_beer program. They are currently working with @cidercidreca to develop a level 1 course focused on Canadian cider training, so watch their spaces for that. I am now looking towards the future and have started studying towards the Pommelier exam. The event is free to attend, and I will be leading the participants through a guided cider tasting experience (of course, with my mom!). Bonnieheath Estate is a picturesque lavender farm, winery, and cidery located in Waterford, Ontario (between Brantford and Port Dover). In terms of distance from Toronto, it’s about an hour and a half drive southwest. Although they are also known for their wines, Bonnieheath is home to Folkin’ Hard Cider! They have several very unique sounding flavours, including the True Blue (made with local apples, blueberries, AND their own grown lavender). Niagara Cider Company - Blackberry Honey Cider 📍Beamsville, Ontario 🍏Semi-dry, crisp, tart, slightly fruity, floral, and light 🍏The initial taste blends both apple and blackberry but is still very dry 🍏There is a clear tartness that hits the palate at the initial sip and stays on your tonsils in the aftertaste, 6% abv ✅9/10 Wow! This cider is DECEIVINGLY dry, considering the fact that it has honey in its name. The blackberry juice isn’t sweet at all, and it actually brings a really unique tartness (without any syrupy sugary-ness) to the blend. The honey honestly just brings in a floral touch and doesn’t alter how crisp the overall profile is. The flavours mesh SO well together and make a really cool combination that may just be one of my new favourite ciders from Niagara Cider Co. Every April 20th, millions all over the world celebrate plants and indulge in their consumption. Between this, and following on the coattails of @cidercidreca 1st online conference that took place this week, it felt only appropriate to open this '21 Ostara Dandelion from @revelcider . 🌼🍎🌼 This cider is quite a combination of different ingredients, with an apple cider base aged on golden plums and fresh picked dandelions. Tariq & his team have already provided a stupendous description of what this cider is and what it may impart to the consumer. As this has aged for a bit, it's fascinating to experience the evolution of the liquid from its original iteration. I personally find the plums contribute quite the bulk of the initial nose, but as you breathe deep, a joyous bouquet of apple arises. 🌼🍎🌼 On the tongue, this is very zippy with its acid, with more plum featured. On the swallow, I find the dandelion. This sensation matches what is described on the label; specifically pressing your face into the flower. The finish is clean, quick, and complete...there's nothing left on the palate. This begs your brain to refresh the flavor that your buds just were enjoying. Tip, sip, repeat. Did a lovely little @calvados_boulard tasting this week at @gitanes. $9 for 2oz, 0.5oz x 4 choices, was a true winner! Did you know calvados is made with fully fermented cider? Most cider makers in France also make a calvados, so it’s a great way to ensure no product goes to waste and create something truly magical while you’re at it. This flight featured their original Pays D’Auge you can find at the lcbo, their XO (which was so smooth and rich), as well as two cask finished choices - rye and whisky barrels. It’s amazing to see the subtle and large differences the various processes can make. But all truly spectacular to try. The Carlisle Cider Company - Progreston Falls 📍Carlisle, Ontario 🍎Crisp, semi-dry, bright, tart, slightly floral, and fruity 🍎Has a blend of apple and Bosc pear in the flavour but only a little sweetness 🍎Has a clear tartness in the flavour that lingers on the palate in the aftertaste, 6.5% abv ✅7/10 This cider has some interesting complexity that makes it both tart and crisp at the same time. Although it claims to be in the middle between bone dry and semi sweet on the label, you can’t really detect much of the sweetness in the profile because of the tartness present. The tartness also really doesn’t leave your palate for a long while, which I enjoy.
