Yields 4 servings/ 15 minutes Ingredients: 2 bunches Swiss chard, stems removed 1 tablespoon olive oil 2 garlic cloves, minced Large pinch crushed red pepper flakes Salt. Step 1 Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips. Step 2 Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil. Cover pan and let cook for about 2 minutes, until chard is wilted. Uncover, stir and cook for 2 minutes longer. Season with salt. But wait, don’t throw out the chard stems. Remove them, then slice into 1/2” pieces and saute in a little oil. Add the garlic and red pepper, and proceed with the recipe. Ingredients: 1 pound kumquats 2 cups granulated sugar 2 cups water Instructions: Wash and slice the kumquats thinly, removing the seeds as you go. In a large pot, combine the sliced kumquats, sugar, and water. Bring the mixture to a boil over high heat, stirring occasionally. Reduce the heat to low and let the mixture simmer for 30-40 minutes, or until the kumquats are soft and the mixture has thickened. Remove the pot from the heat and let the mixture cool for a few minutes. Using an immersion blender or a regular blender, blend the mixture until it is smooth. Return the pot to the stove and bring the mixture to a boil once more.
