Happy Ugadi/ Gudi Padwa to everyone 🙂 Wishing everyone a very Happy and Prosperous New Year! This day marks the beginning of a new year in the Hindu calendar in India. It is celebrated in many parts of India during this time and is called by various names. In the frame: Karjikai ( or , also called as Gujiya or Karanji) This is a deep fried sweet dish made with flour with a sweet filling that has semolina, Dried coconut, poppy seeds, Sesame seeds and sugar. Ingredients for the dough: 2 cups Flour 1/4 cup Rava 1 tsp salt 4 Tablespoons Ghee Water as needed to make the dough and let it sit for some time till the filling is ready and cools down. Apply some oil over the dough and keep it covered.  Filling 1 cup Roasted Semolina 1 table spoon Ghee 2 tsps Poppy seeds 2 tsps Sesame seeds 1 cup Dry coconut shavings 3/ 4 Cup sugar or jaggery Heat ghee in a pan and roast poppy seeds, sesame seeds and dry coconut shaving together. Then add the roasted rava into it. Add 3/4 cup jaggery power or sugar as per your choice of sweetness. Roast it and turn off the flame.  Once cooled, roll small balls of the dough and flatten them into small circles. Put some of the filling in half of the circle and fold it into a semicircle and seal the edges. Brush a little water in between the edges and then seal it as shown in the video with your fingers.  Fry these half moon shaped dumplings in medium hot oil till the outside is slightly brown and crisp.  Recipe video to follow soon.
