Kuay Jab Mr Joe: Super Crispy Pork Belly! 2️⃣ Crispy Pork Belly I believe what gave rise to Kuay Jab Mr Joe’s popularity is their crispy pork belly. Apparently, the Thais do not roast their pork belly in a charcoal oven like in Singapore or Malaysia. Instead, they deep-fry it till it’s crispy. Interestingly, they managed to deep-fry it such that the shatters upon biting on it and the meat remains tender and juicy. No wonder every table has a plate of this! Kuay Jab Mr Joe: Super Crispy Pork Belly! There are quite a few well-known kuay jab stalls in Bangkok but this is my personal favorite. For those who may be unfamiliar, kuay jab is the Thai’s take on pig organ soup where they serve all parts of the pig in a unique peppery broth. What’s more unique about Kuay Jab Mr Joe is that they serve probably the crispiest pork belly in Bangkok! 1️⃣ Kuay Jab As I’m not a fan of pig organs, I ordered a portion without any organs which came with really tender sliced pork, crispy pork, and flat rice noodles. The flat rice noodles were reminiscent of the kuay chap rice noodles seen in Singapore. However, the secret was in the broth which was full-bodied, garlicky, and not overly peppery.
