Guest post by @z.y.ng 😍 Itaewon, Seoul 🇰🇷: Had the most amazing start to our week in Seoul at this craft makgeolli bar on the edge of Itaewon @ahn.mak ! Their menu of food to go alongside Korea’s oldest alcoholic beverage is a beautiful irony featuring modern interpretations of local flavours, which draws heavily from international cuisine in their delivery and presentation. My favourite was the tuna sashimi salad. The tuna and scallops were so fresh, the minari so crisp, and the grapefruit brought the finishing touch to a delightful harmony of sweet, sour and zingy in a salad I’d never have attributed to Korean cuisine. There was a good amount of kick in the gochujang and yuja sauce, which was washed down oh so well by the light-bodied bottle of makgeolli we had! 🍣 My wife’s favourite was the hot stone pot rice, which came after both mains as a side. Most probably cooked in some chicken fat together with the abalone and jujube, this was so fragrant and umami that it can probably give many chicken rice stalls in Singapore a run for their money! As @jojoeats said, this was essentially a ginseng chicken soup without the soup, but with rice cooked to a perfect state of being sticky yet distinct, and soft but chewy at the same time. This will go down as a core memory. 🍲 Like any good story, our meal started out and ended off with the same theme of creativity in the baking department. To start, we had crepes as a taco (in which we had a well-balanced mix of Mexican and Korean ingredients to complement pulled pork), and to end, we had filo pastry as a cake (in which we had an outstandingly fine red bean cream topped with fresh strawberries). Hands down the best shrimp tonkotsu ramen in the city🦐🍜 The broth was absolutely the highlight, which had a luxuriously creamy and milky texture infused with intense shrimp flavors. A drizzle of shrimp oil was added upon serving, enhancing the overall flavors and scent of the broth. As to the noodles, you have a choice of traditional ramen or sliced noodles.
