RONI CUPS FTW 💪🏻 🍕 💪🏻 Bought some @lapiazzaofmerrick dough & dolled it up w/ the slicing assist from the OG Lil NYC Food Guy @craigweibman who cut the Roni, red peppers, broccoli, and fresh garlic. Mozz was sliced Boar’s Head from the deli counter. Left the pie in the oven under the broiler a little longer than planned hence charred crust. Still legit AF esp w/ @mikeshothoney! #nycfoodguypizzalab #pizza #pizza🍕 #🍕

When I was a kid I hated chunky tomatoes, cooked & raw, but I grew up and saw the glory. Good 🍅 are the key to success. I hand crushed and drained whole canned Roma 🍅 for this homemade Sicilian 🍕. Cheese down first then the tomatoes and then a healthy sprinkling of @belgioiosocheese shaved parm and a glug of EVOO all around. Dough was par baked 15 minutes at 425 and then finished at 450 for another 20 minutes before finishing under the broiler for 1 minute. 👀 all my 🍕 creations at #NYCFoodGuyPizzaLab #pizza #homemadepizza

LISTEN TO BEAUTIFUL SOUNDS OF SIZZLING CHEESE! I’ve been trying to be on IG a little less lately but I’m so excited about my 2nd Detroit-style pizza I wanted to share to shout out the @forzapizza simple Sicilian dough recipe and my new @lloydpans 12x19 high-walled Detroit pan @millennium_falco recommended. Swipe ⬅️ to see the crisp cheesy crust & airy interior. For 🧀 I used pepper jack on the pie and cheddar around the edges as it crisps up magically (great rec by @kenjilopezalt @seriouseats) and then topped with roasted 🍄, fresh peppers & onions, crushed 🍅, and oregano & @belgioiosocheese parm. The sturdy pan conducts heat so well in my home oven but I still think I’m going to need a baking steel for the bottom to get that pizza shop golden color & pastry-like crispness. Always happy to see my old friend “Tri-Pie” emerge from the oven. Vodka, Tomato & @verus_h14 homemade pesto over cubed low moisture mozz for that nice melt & great bites of creamy mozz. All on @umbertosplainview dough that I put into an oiled pan and let rest for 90 minutes with a stretch toward the corners of the pan every 30 min until the dough happily filled the whole pan. This means I didn’t just force the dough to be the size of the pan on first stretch, I let it rest, get to room temp, and rise a bit. Made a good square sheet pan pizza into a real Sicilian. Like @millennium_falco tells me, “Listen to your dough.” Three sauce style inspired by @joeandpats @joeandpatsnyc @rubirosa_nyc & @marinarapizzanyc #homemadepizza #nycfoodguypizzalab

Full recipe in SQUARE 🍕 IG story highlight coming soon! ======================================= 4-day (100 hour) cold dough ferment! Patience is a virtue! I wanted to achieve some real airy lightness and a golden, crispy bottom and I did it on the first try! Swipe ⬅️ to see under the dough & the airiness (hole structure) of the final pizza! ======================================= The four cheeses, in order, are fresh mozz, grated low moisture mozz & cheddar (see SQUARE 🍕 story highlight soon to learn why I used cheddar), sharp provolone, and @belgioiosocheese parm reggiano. Then topped with crushed tomato sauce, vodka sauce & pesto. ======================================= 🙏🏼@millennium_falco who sent me his Sicilian dough recipe (also in his IG story highlights). ======================================= Once dough was done I moved on to the @metropizzalv Sicilian recipe from multi-day cold ferment all the way to finish (Google @pizzatoday Knead to Know Metro Pizza Sicilian). 🙏🏼@everythingbutanchovies for advice on that! #NYCFoodGuyPizzaLab Homemade 🍕 Dough #2 Classic Focaccia topped w/ hand squeezed plum tomatoes, hand torn fresh mozz from Leo’s Latticini in Queens & shredded provolone both via @unionmarket, @belgioiosocheese parm reggiano & olive oil. Topping style inspired by @stefano_secchi (see his recent IGTV pizza video) and @millennium_falco (mozz + provolone). ================================== Dough is 67% whole wheat flour from @simpleloafbakehouse , 33% @kingarthurflour AP w/ nearly 54% hydration. Followed the classic focaccia recipe from @nytcooking by @amelia.nierenberg. Swipe ➡️ to see ingredients in final photo. ================================== Very happy with the hole structure and color on dough, especially undercarriage (see video in 6th photo slot) but also very dry and crisp especially compared to homemade dough #1 with 84% hydration (see previous post & 1st dough IG story highlight). This dryness was predicted by the actual recipe so definitely adding more water if I do this version again. Loved the flavor profile thanks to the provolone and the juicy tomatoes. Definitely recommend a hefty glug of olive oil atop the pizza both right before and after bake. On the reheat I added crushed tomato sauce & more olive oil and it was excellent.

#NYCFoodGuyPizzaLab HISTORY! My FIRST PIZZA DOUGH FROM SCRATCH for this Vodka-pesto-tomato pie that’s partially whole wheat and 84% hydration. Very light and easy on the stomach. Def envisioned a bigger rise but prob used too large a pan for that. It def had some nice hole structure as you can see in the final pic. ======================================= Cribbed a few diff recipes for this but special shout out to @millennium_falco for talking me through bakers pct and converting one of his recipes from grams to imperial for me and for sharing his cheesing method (fresh mozz down first, then shredded low moisture mozz, then splotchy sauce, then parm) and his killer recipes on his IG highlights. ======================================= Additional shout out to @rezdoranyc chef @stefano_secchi and his recent IGTV pizza al taglio making video with his son Luca who is adorable. I ultimately combined some of Falco’s methods and Stefano’s measurements to get here. Stefano’s recipe is for one dough, Falco’s are for multiple doughs. ======================================= My Dough Recipe is in the slideshow. 6-ingredient STUNNER. Maybe one of my TOP #nycfoodguypizzalab creations. Mozz & shaved parm, alternating strips of pesto & crushed tomatoes sprinkled w/ Chile flakes, roasted shiitake mushrooms and roasted red peppers. THATS IT. 🔥 🍕 DETAILS FOR THE PIZZA HEADS: 18-inch dough from @iggys_pizzeria pre-baked on @bariequipment pizza pan at 550 in home oven until end crust golden brown. Then the two cheeses & sauces and mushrooms I roasted separately for 5 min w/ olive oil, fresh garlic, salt, and pepper at 550 bottom shelf of the oven and roasted red peppers from Russo’s East Village (the only Italian specialty store in the hood @jiggycomedy they make great sandwiches too). Then back in the oven at 550 middle shelf, spin around a few times for even cooking, and remove when end crust is golden & brown. Glug of olive oil around the crust & more grated parm reggiano post bake. Heaven.

#nycfoodguypizzalab back in action last night. Scroll ⬅️ to see my spin on @millennium_falco-style Thin-N-Crispy. It’s a SUPREME 🍕 w/ stripes of spicy crushed tomato, green pepper, red onion, pepperoni & broccoli I charred under the broiler with salt, pepper, garlic & olive oil pre-bake. Dough is half an 18-inch dough spread thin and pre-baked at 500 bottom shelf pre-topping. Finished middle shelf 10-15 minutes at 550. Lucky my oven goes that high! Dough from @umbertosplainview Which I thought would be crap by now as I took it in and out of the fridge a few times but hey, thanks industrial yeast, it was fine. Homemade Detroit-style pan pizza. Detroit means burnt cheese around the edges which I sprinkled around the raw dough pre-bake. Great crumb & nice golden bottom (see final slide) but this was a little too much dough for the pan resulting in less room for air bubbles to form and a denser pizza than I would have liked. This was an 18-inch dough in a 12-inch pan. I oiled the pan, pressed the dough toward the edges of the pan lightly being careful not to overwork and then I covered it with aluminum foil and a cutting board to proof (rise) at around 70 degrees for 5 hours. It got a nice rise but I think It was also a bit tough because I overcooked it by pre-baking it without cheese or sauce on top for 5 min bottom shelf at 500. It was great for the bottom but the top also toughened resulting in cheese that was more of a hat atop the dough than a conjoined being of melty oneness. Thanks to @radtimespizza crew & @mamas_too for initial guidance. Dough purchased from @umbertosplainview. If you buy dough get it from a pizza shop not the supermarket. Pizza pan from @bariequipment on Bowery. Peep #nycfoodguypizzalab for all my crazy creations.

PAN PIZZA BAYBEE 11th of 11 pizzas crowned top pizza of the night. With advice from @radtimespizza @mamas_too & @joe_rosenthal I “dimpled” the dough in the pan with a little olive oil and covered it in a warm place for around 4 hours. It rose a bit, not as much as I’d hoped, and then I spread it toward the edges, cheese to the edge, and dropped dollops of sauce & a heavy sprinkle of Reggiano-Romano mix. I baked it on the top shelf at 500 so it cooked evenly throughout and then once the top looked good I dropped it to the bottom shelf so the undercarriage would crisp up and get more golden. It worked. The pizza gods rejoiced for crispy cheesy edges. #nycfoodguypizzalab

Not my prettiest pie but a homemade Buffalo Chicken Pizza from #nycfoodguypizzalab is about getting dirty. Was it better than @lapiazzaplainview & @lapiazza_merrick? According to 20 people who grew up on both - YES! The key? I borrowed @greatjonescafe Buffalo recipe. @franksredhot, butter AND 🔑 = maple syrup. Emulsified for 30 minutes. Pre-baked extra large crust (500 degrees for about 15 min), Bed of shredded @grandecheeseco Mozz, fried chicken cutlet from @iavaronebrothers, more Mozz, bake until golden at 500, extra drizzle of sauce & @mariesdressing Bleu cheese on the side. Happy Birthday @craigweibman.

#nycfoodguypizzalab in action @russosparkslope ricotta, fresh Mozz & pepperoni + PollyO low moisture Mozz, pickled jalapeños & @iggys_pizzeria dough & sauce. To make this 14” thin crust I cut one 18” dough in half, pre baked at 475 degrees for about 5-10 min on my @bariequipment aluminum pizza pan until seeing a bit of golden color on the upskirt then cooked for 10-12 min at 500. Successful pizza night w/ new pizza chefs @kinzer & @laurenrmarcus #tbt

Homemade pizza w/ ingredients donated by @tonyboloneys 1 of the maddest pizza scientists in the world. Truffle & regular fresh Mozz, cherry pepper vinegar & @ezzosausageco #RoniCups per Mike at Tony’s I par baked the crust with sauce & mushrooms at 450/475 in Home Oven on @bariequipment 18” pizza pan and added the cheese and roni when I started to see some golden color on the outer crust then cooked for another 10-15. #nycfoodguypizzalab #tbt #latergram

Prob could have done longer cook and started at 425-450 for first 15 min for a more even cook then jack it up to 475 for last 10 min. #nycfoodguypizzalab
