Let's talk syrups! Making your own syrup is pretty easy, and quite addictive once you start. Once you've got the basics down, the next step is to make flavoured syrups, like the two winter spiced ones shown here. For any syrup, simply mix granulated sugar with liquid (usually water) and heat gently, stirring until all the sugar is dissolved. Don't let it boil, or the sugar will caramelise. Let it cool, then strain into a bottle or jar. It'll keep for 2-3 weeks in the fridge. When flavouring syrup, put your other ingredients in right at the end, after the sugar is dissolved, then remove from the heat and allow the mixture to steep as it cools. Left to right here: 1. Simple syrup (1:1 white sugar and water). 2. Rich demerara syrup (2:1 demerara sugar and water). 3. Spiced cranberry syrup (1:1 white sugar and cranberry juice; add 3 strips orange peel, 3 whole cloves, 1 cinnamon stick, 1 star anise). 4. Swedish Glögg #sundayafternooncocktails There's no fixed recipe for Glögg, but this one was a winner for us. #drinkalong 500ml red wine (merlot or zinfandel are ideal) 250ml ruby port 50ml aquavit or brandy 100g caster sugar Zest of one orange, in strips 25g raisins 3 slices peeled ginger 5 cloves 8 cardamom pods 1 cinnamon stick 25g sliced almonds Combine all except aquavit in a pan and heat gently until sugar is dissolved (do not boil). Remove from heat, add aquavit, and strain. Serve with slice of clementine. Can be stored and reheated as required.
