- ‘Ed’ is chef, bartender and server of this cocktail bar which utilises the concept of extractology, in which neutral spirits are used as a medium for flavour extraction rather than their alcohol content. All flavour compounds are naturally derived from infusions and fermentations rather than from syrups or concentrates. Hidden under the shadowy recesses of the stairs leading to a brightly lit bookstore, it’s almost as if you’re supposed to miss it. There is a sort of intimacy (or insanity) about the space that sits only four - dried herbs hang from the ceiling, antiques of all sorts adorn the shelves, research papers, recipes, calligraphy, chemical compounds and poetry are plastered on every inch of wall including a hannya mask that stares down at me. Did I mention the washroom looks like someone recently had an episode of hypergraphia in there? Like a reflection of the space, there are a myriad of influences in the omakase, with a focus on seasonality and a zero-waste mantra; trimmings are infused into the cocktails, used tea leaves are dehydrated and reincorporated into dishes. Every part of every thing is utilised, meat, fish, plant and insect. It’s hard to describe an experience like this. There are equal parts ingenuity and insanity. Also I don’t think his name is Ed.

- While the food here is certainly worthy of praise in its own right, just an impressive of a feat is Oshima-san’s multifaceted role here - temple manager, maître d’, chef and bartender. After dinner, we are led down a shaded path down past the main temple where the hidden bar is. Yet, before stepping into the bar there is still a sense of trepidation - I am after all treading into a place that not long before served as a private bar for monks. But I guess I needn’t have worried - there are no spirits here… right? That said, this is no fancy cocktail bar - neat, rocks, mizuwari and sodawari is all you’re offered. There is also umeshu, which Oshima-san prepares himself. Oshima-san can also speak a fair bit of English, and upon noticing the film cameras I was lugging along proceeded to bring out the photos albums full of photos that he takes around the temple, documenting the changing seasons. We had a little chat over the beauty of the seasons and of photography. It was one of the rare nights where the bar was completely empty, which in a place like this is ideal. Sipping highballs in a temple bar overlooking a stone zen garden while jazz is playing - as far as bars go, none embody zen as well as here in my experience.
- Tucked away along an alley on the outskirts of ‘little Kabukichō’ is a charming little izakaya that you would easily miss if not for its stained glass door depicting the Eye of Ra. There’s just some retro vibe about it that lends to its allure, city pop playing softly in the background with the enigmatic, fedora-toting barman and proprietor Yama-san whipping up drinks while chatting genially with the patrons. Past the kegs of draft namazake is a shelf of whisky bottles that cleverly conceals the door into a hidden bar, which for the initiated (or otakus if you will), is a delightfully rich cornucopia of ambient-aged koshus - a stark contrast to the ‘light’ and fresh namazakes on the other side. There’s stuff here ranging from 3 years to one aged since the Shōwa-era (circa 1984). Nacchan runs this side of the bar, but don’t be deceived by her flowery kimonos, the sakes here are anything but floral. They also serve some impressive tapas that would make put your usual watering hole grub to shame. Blue-cheese and black garlic ham cutlets with honey dip, sous-vide chicken livers, amaebi shiokara, akaebi pickled in aged sake. Of course, they also have izakaya staples like oden and tori karaage and a deliciously creamy curry soup udon that warms you right up like a hug. I think I’m ready for my next ume sour.
