First, the Tomato & Fermented Strawberries Tart was a perfect blend of the refreshing and fresh flavours of Tomato Miso and Fermented Strawberries, accompanied by the creamy and smoky Crème fraiche. Additionally, the Salsa, made with fresh and dried Tomatoes, offered an impressive contrast of textures. Next, the standout dish was the Yellow Fin Tuna with Pistachio Cream & Preserved Daikon. While I thoroughly enjoyed the previous version featuring Tuna with Cos Lettuce and Pistachio, the addition of preserved Daikon was a new experience. The preserved Daikon atop the Tuna provided a refreshing burst of flavour beautifully balanced by the richness of the Pistachio Cream. Lastly, the Salted Banana Ice Cream with Coffee & Hazelnut, one of the reasons for my visit, left a lasting impression. This dessert, featuring layers of Ripe Banana and Coffee-infused Ice Cream, Hazelnut and Coconut Dacquoise, and blackened Banana Jam, offered a complex interplay of flavours, with distinct notes of Coffee, Banana, and Hazelnut.
