The food of my people has been top of mind in the last 18 months. If you've been to one of my dinner parties recently, you will have heard me wax lyrical about what third wave culture food means to me, the beginnings of what my restaurant concept will look like, and my internal struggle around the concept of authenticity in food. I sought to find answers to the latter through a food tour of the Mekong delta. I envisaged conversations about ancestral cooking techniques in my terrible broken Vietnamese, bonding with strangers over a passion for food, and moreover, an understanding of what the southern Vietnamese palate of flavours is. I had this misconceived notion that the root of authenticity would be bolder, wilder, and exciting. I believe we have my growing up during the golden age of rom-coms to blame for that. What I experienced was reality. The transplated cuttings of southern Vietnamese food we find in Melbourne are very different from the current state of its origins and not a time capsule of tradition, unaffected by westernisation. I forgot that attitudes and preferences to food change in all places according to external influence and innovation. I did not enjoy the majority of the food that I ate in Vietnam. I found most meals too sweet and lacking in the depth of flavour I had been primed to expect, causing a mini existential crisis. I know. Very melodramatic! Upon deep reflection, this experience has brought about a feeling of freedom. I don't have to worry about being authentic to an immutable tradition. I just need to be authentic to who I am. My memories of this food. My vision of what I want people to evoke in those who eat my food. I am free to let my accumulated life experience form a gestalt through which I create food and project upon the world my ideal of hospitality. Tl;dr - I should make food that represents me. I am only beholden to my own authenticity. Come eat at my place or pop-ups. Watch this space.
