Meet Betty White and Coral, both from the Autumn Farm seizure. Betty and Coral are both doing well despite having scaly leg mite and roundworm (both are being treated) and as you can see, Betty's back spur was completely overgrown. They are enjoying daily salads with blue berries, sweet potato, kale, cucumber and cabbage, along with regular feed. On day 4 of my Smokys adventure I woke up in a proper winter wonderland. Or, to quote my friends when I showed them the photos, in Narnia! The snow which on the previous evening seemed like a passing flurry, settled properly and covered everything with a thick, sound muffling blanket. This took me right back to my childhood winters in Poland. Those were the days! Luckily, I knew from my to expect all weathers when I was packing for the trip. I had my layers, various hats and hoods, waterproof socks (best invention since sliced bread!), and of course gloves (which had to be supplemented by an extra warmth of my spare pair of socks). My diy gaiters also came in handy in keeping the snow from going into my shoes. There was about a two mile stretch where I wished I had my spikes with me. It was so icy every step had to be tested with my hiking poles, it was like walking through an ice rink, only on a slope. (You can see it in the second photo). The trail was really quiet, as many thru hikers took rest days waiting for the weather to improve, and the day hikers could not get to the trail with the roads closed due to snow and ice. I passed maybe ten people in the whole day. When I finally got to Mt Collins shelter, there wasn't a soul there so i had the whole shelter to myself. The temperatures were still dropping and I knew it was going to be a cold night. Handsome Clem at The Farm Micro Sanctuary In January of 2023, I had been following a rescue that Ziggy's Refuge had been coordinating. So many neglected animals needed rehoming. One of my favourite sanctuaries, The Farm, run by my friend, Jessica, said that they could take on five of the goats. 2 males, and three females. They named them Maggie, Abigail, Trudy, Gary, and this magnificent young man, Clem. I have to say I had fallen in love with all five. Now when they were rescued, it was suspected that Maggie was already pregnant. But then, with after a vet visit, it was confirmed that she was not. Jessica posted the news, with a mixture of relief, but a sneaky little bit of disappointment. Then, a few weeks later, out of nowhere, little Trudy gave birth to baby Todd. Some people jokingly wondered, whether Clem or Gary was the father. In reality, Todd was a little carbon copy of Clem, and there was really no doubt whatsoever. 🌱 UNCOVERING MY INNER CHEF 🌱 On Plant FWD I had a chat with Emile van der Staak, chef at @restaurantdenieuwewinkel that is fully plant based and has two Michelin stars. To be honest I never had a lot of interest in Michelin restaurants or cooking on this level. To me it felt like another thing to achieve, most of the time over the backs of animals, and I didn’t really ‘get’ the food. It was too abstract and too small of a portion for me 😂😅🫣. It was just beginning of this year that I met someone that explained to me more about plant based Michelin cooking where he showed me cookbooks by @alainducasse with dishes that were made with produce fresh from own garden that made my heart beat a bit faster for haute cuisine and made me start to appreciate the art of it more. Luckily the culinary environment is changing to less exploiting animals and the planet to more conscious, sustainable and thus plant based. Yet when I think of if this really is my style of cooking then I don’t think so. I like my food to be accessible for everyone, but also royal in size (hence an extra plate of shoarma on the fine dining table on photo 4 😂) and the ingredients recognizable. Maybe that’s my North-Indian ancestry working through me ✨ While I was praising Emile for being part of leading the culinary world into a plant based future, he actually returned it and told me not to underestimate the importance of my style of cooking with knowing how to translate my food to the people. Which is definitely what I feel is important. Yet at the same time I do want to learn how to cook like this more, for the skills and the challenge, to then come down again and cook beautifully for my peoples 🙏🏽 Thank you Emile and everyone else on this journey for being a part of uncovering the chef inside of me. Our hens are getting their eggs back! 🐔 They get so excited every morning when I open their coop door, and they all fly out and start eating! 💖 Hens have been bred into laying hundreds of eggs a year, way before that, though, wild chickens/red jungle fowl only layed 10-15 eggs a year. Hens loose a lot of nutrients from egg laying, and because they've been bred to lay so much, they often have egg related health issues (which some of our hens have had). Eggs should be fed back to them to help them gain back the nutrients they lost! Here's our hens getting back their eggs, and they're so happy, too! 💕 The last picture is of our handsome rooster, Toothless. We have 3 bachelor flocks (big, medium, and small), and this is one of them! 💕🐓 Here's our medium-sized rooster flock (besides the bigger white one, he does very well with our medium-sized roosters!) They're having their yummy daily morning treat, and they love it SO much! ❤️ Introducing Cashew (bigger light colored roo), Delta (black roo to the left), Raven (middle roo), and Star (roo to the right)! 💖 Roosters are, unfortunately, so neglected and go unappreciated for, they are often dumped off or worse. 😿 Roosters are amazing and incredible in so many ways. Easy Pineapple Fried Rice - Craving take-out? This dish gives you that perfect balance of sweet and salty flavor you're craving, along with a mix of textures that makes it super satisfying and much better than take-out. Ingredients: 2 tablespoons olive oil 1 small onion, diced 2 garlic cloves, minced 1/2 tablespoon grated ginger 1/3 teaspoon salt 1/2 teaspoon chili powder 1/2 cup shredded carrots 1/2 cup frozen peas 2 cups cubed pineapple 3 cups cooked rice 1 tablespoon sesame oil 2 tablespoons soy sauce 1/2 cup roasted cashews (l like mine roasted in the air fryer) 1/3 cup chopped green chives Instructions: Heat oil in a large nonstick skillet. Add diced onion, minced garlic, grated ginger, salt, and chili powder. Cook, stirring occasionally, until the onion becomes soft. Add shredded carrots and frozen peas, stir, and cook for about a minute. Add cubed pineapple and cook until pineapple is lightly caramelized. Add rice, along with sesame oil and soy sauce. Stir to combine. Indulge in this heavenly Vegan Chocolate Cake - it's the perfect treat for any occasion! 🍫🍰 Decadent Double Chocolate Vegan Cake Ingredients: 2 cups all-purpose flour 1 3/4 cups granulated sugar 3/4 cup unsweetened cocoa powder 2 teaspoons baking powder 1 1/2 teaspoons baking soda 1 teaspoon salt 2 cups almond milk 1/2 cup vegetable oil 2 tablespoons apple cider vinegar 2 teaspoons vanilla extract 1 cup boiling water Vegan chocolate chips (optional, for garnish) Directions: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
