Happy National Mai Tai Day! The Mai Tai is probably the most well-known classic tiki drink, but also probably one of the most misunderstood. Back in the day tiki recipes were a closely guarded trade secret and as a result people would start putting anything in a drink and calling it a Mai Tai. It might surprise some to learn that there is no “Authentic Hawaiian Mai Tai” because the Mai Tai is not authentically Hawaiian. The drink was developed in 1944 by Victor Bergeron at his eponymous Oakland restaurant Trader Vic’s. Recently I had the opportunity to visit the original Trader Vic’s, which is now in Emeryville, and of course I had to order a Mai Tai straight from the source. Now there are a lot of Mai Tai specs out there and many bartenders have their own preferred ratios, but I fall back on the Smuggler’s Cove recipe as I think it’s straight forward and accessible. The original drink and many modern interpretations call for a Martinique rhum, but I have always had a difficult time sourcing Martinique rhums in Alberta and the rum that the original drink used is long gone anyways. Martin Cate recommends a premium aged rum, like the Appleton 12, and find that does the job quite well. Now you do you of course, but over the years I have seen people put a lot of things in Mai Tais that do not belong in Mai Tais. There is no pineapple juice, no spiced rum, no grenadine, no amaretto… just rum, curaçao, lime, orgeat, and sugar. If you like all those other things in your drinks, go ahead and put them in your drink, but it’s not a Mai Tai anymore. Great decor. Good view. Awesome drinks & food. Ryo (bartender) was alot of fun to hang out with. 🍹Kona Club: BEST Chi Chi I’ve ever had! Awesome decor & awesome bar with a great bartender (Tinah) in the pretty town of Piedmont, CA. 🍹Tiki Tom’s (Not Pictured): Way too nice mall Tiki Bar! The cocktails were really good & the decor was next level. 🍹Forbidden Island: The only bar that I spent time with the owner. Mike is a terrific guy. He loves spending time with guests & sharing intel on his best drinks. I.E: The Rum Barrel 🍹Kon-Tiki (Not Pictured): Classic big name cocktail bar with good drinks, decor & fun locals to hang out with. They have a smash burger that will blow your balls off! 🍹Kon-Tiki Room: A small off shoot of the larger Kon-Tiki. Jenny, my bartender showed me a great time & whipped up solid drinks. 🍹Wilfred’s: Easily the coolest bar build on the trip. Wilfred’s is in the middle of beautiful wine country. They have great decor including a couple really awesome interactive elements. Monica, Mady & Meredith were so much fun to hang out with. Definitely want to make a point to get back here. 🍹Kapu Bar: A special bar with a lot of detail & care put into it. Chris & Lady B kept me company during my visit & even introduced me to one of the builders, Mike who helped Bamboo Ben build this one out. Great Hawaiin Sliders too. 🍹Shipwrecked: A college town tiki bar with a unique design. A lot of the pieces in the bar are made out of old car parts which makes for an awesome build. The drinks & staff are awesome.
