This Banana Cheesecake came together so easy, it was like a dream. From the graham cracker crust to the creamy Banana filling, each step was super smooth. A morning batch of Italian Cuccidati for my holiday orders. This little cookie is a delectable labor of love to be certain. The filling is made up of ground almonds, walnuts, hazelnuts, figs and raisins, along with some orange marmalade and fresh cinnamon. These little beauties take a minimum of two days waiting time after making the filling and dough to get the flavors and textures just right. I loved making this Black Forest cake as I had no made one in a little while. There are four layers of chocolate cake sponges brushed with a cherry liqueur syrup and then generously covered with homemade whipped cream and fresh cherries between each layer. The entire cake is then covered in more fresh whipped cream and chocolate ‘bark’ is added to the outside of the cake. Another fun red velvet cake to start the pre-Thanksgiving weekend off! This one is a two-layer 7” cake with loads of cream cheese frosting . I use the parts that I trim from the cake sponges to make the crumble that sits on top and along the sides. This cake has the perfect balance of tanginess with a hint of cocoa powder as is customary in red velvet cakes. I recently received a request from a friend to make a Black and Gold chocolate cake to celebrate a 40th birthday. I started doing some research for inspiration and came across a Black Cocoa cake which was pitch black inside and out. Black Cocoa is used to make Oreo cookies their signature color. I ordered some online and made a small test cake and some buttercream once it arrived and was blown away by the depth of flavor. My taste testers agreed completely! This cake is the result of that research and some fun brainstorming ideas. With the Black Cocoa I was able to achieve an all black chocolate cake without using any food coloring to achieve the dark color. This is a four-layer 12” cake with Black Cocoa buttercream throughout. The top is decorated with Black Cocoa macarons filled with a gold-tinted vanilla buttercream. Some gold pearls and rock candy help top off the look, while the gold edible lace band is made entirely out of sugar! This was my first time making a Cannoli pie and it did not disappoint! The filling is made with fresh ricotta, cream cheese, powdered sugar, heavy cream, orange zest and cinnamon…along with plenty of mini chocolate chips. A generous layer of chocolate ganache is spread over the top, followed by swirls of homemade whipped cream. All of this sits on top of a buttery, flaky crust. Snickers Cheesecake!!! This was a special request from a dear friend for a birthday celebration this evening. The crust is made of crushed Oreo cookies and the filling has chopped bits of Snickers throughout. There is a full two pounds of cream cheese, in addition to a small amount of sour cream and heavy cream. The top is covered in a homemade salted caramel sauce before placing the mini Snickers and peanuts. Additional caramel sauce is poured over the peanuts for good measure and to ensure the decadence level of this cheesecake is just right! Carrot Cakes are the most popular of all of the different varieties of cakes I make…by far! There are so many different ways to create a Carrot Cake and each one yields a slightly varied end result. Some people don’t like nuts in their cake, some do. Some don’t like ginger or nutmeg or cloves and only want cinnamon. The varying combinations are numerous to say the least. For this cake, the only special request was to have some toasted pecans on the top but not inside the cake. Oh, and they wanted me to decorate with macarons as I have frequently done in the past. To say this cake is moist and fluffy is an understatement. The warm spices combined with the sweetness of dark brown sugar bring a perfect pairing to the velvety cream cheese frosting. Barely a couple of days go by without me making some variation on my Fresh Fruit Tarts. They are naturally most popular during the summer months but given the way Florida weather typically turns out, I sell a lot of them year round! This tart features fresh strawberries, black cherries, kiwis, blackberries and blueberries. The sweet pastry cream filling also had a Vanilla Bean scraped and added to the mixture for a delightfully pronounced and aromatic flavor enhancer.
