✨Cashew Stir-fried vegetables with crispy tofu ✨ So simple yet super delicious!
Ingredients:
* Olive oil (2 Tbsp)
*Firm style tofu (250g, cut into small cubes)
* Soy sauce (1/2 cup)
* Vegetable broth (1/2 cup)
* Sweet chilli sauce (1 cup)
* Garlic (2 cloves, grated)
* Brown sugar (2 Tbsp)
* Tapioca starch (1 Tbsp)
* Cashews (1 cup)
* Yellow onion (1 large, roughly chopped)
* Bell pepper (1 red and 1 green, roughly chopped)
* Spring onions
Instructions:
1. Head a non-stick frying pan on high heat. After two minutes add 1 tablespoon of olive oil and the tofu. Cook for 5 minutes until it becomes crispy. Put the tofu into a bowl and set aside.
2. Add the soy sauce, vegetable broth, sweet chilli sauce, garlic, brown sugar and tapioca starch into a bowl. Mix well and set aside.
3. Add the cashew into the frying pan and roast for 1-2 minutes. Be careful not to leave the cashews because they might burn. Put the cashews into a bowl and set aside.
4. Add a tablespoon of olive oil to the pan then add the onion. Cook for 2 minutes until it becomes translucent then add the bell peppers. Cook for 2 minutes then add the sauce, roasted cashews and tofu. Simmer for 2 minutes then top with freshly chopped spring onion and enjoy!
