✨Cashew Stir-fried vegetables with crispy tofu ✨ So simple yet super delicious! <br />Ingredients:<br />* Olive oil (2 Tbsp)<br />*Firm style tofu (250g, cut into small cubes)<br />* Soy sauce (1/2 cup)<br />* Vegetable broth (1/2 cup)<br />* Sweet chilli sauce (1 cup)<br />* Garlic (2 cloves, grated)<br />* Brown sugar (2 Tbsp)<br />* Tapioca starch (1 Tbsp)<br />* Cashews (1 cup)<br />* Yellow onion (1 large, roughly chopped)<br />* Bell pepper (1 red and 1 green, roughly chopped)<br />* Spring onions <br />Instructions:<br />1. Head a non-stick frying pan on high heat. After two minutes add 1 tablespoon of olive oil and the tofu. Cook for 5 minutes until it becomes crispy. Put the tofu into a bowl and set aside. <br />2. Add the soy sauce, vegetable broth, sweet chilli sauce, garlic, brown sugar and tapioca starch into a bowl. Mix well and set aside. <br />3. Add the cashew into the frying pan and roast for 1-2 minutes. Be careful not to leave the cashews because they might burn. Put the cashews into a bowl and set aside.<br />4. Add a tablespoon of olive oil to the pan then add the onion. Cook for 2 minutes until it becomes translucent then add the bell peppers. Cook for 2 minutes then add the sauce, roasted cashews and tofu.
