Quick Squash Lasagne as the second dish from @rainydaybites April cookbook club featuring a Tray creation from @we_are_food One Pot, Pan and Planet. This vegetarian lasagne features squash, lentils, capers, olives, garlic, lemon and lots of mozzarella! I didn’t know what to expect from this flavour combination but it was fantastic! Full flavour with some zest and so satisfying! It did take some time to prepare but surprisingly a relatively quick bake and you didn’t have to precook the lasagne sheets - so that’s a time saver. Meatless Monday featuring “Drunken Noodles” aka Pad Kee Mao inspired vegetarian fried rice noodles. Pad kee mao ผัดขี้เมา is a classic stir fried rice noodles with lots of Thai basil & chillies, & proteins such as chicken, prawns, etc. As I tried to make it vegetarian, I had to omit a couple of things & substituted them with other vegetarian friendly ingredients. I used shiitake mushrooms as my main protein, and instead of fish sauce & oyster sauce, I just used both dark & light soy sauce & nutritional yeast for the umami. Other veggies include baby corns, carrots, spring onions & bean sprouts. I used brown sugar as the sweetener, that is mixed with the 2 types of soy sauce, with a generous sprinkle of white pepper. Overall, it was pretty delicious, spicy & quite aromatic from the Thai basil, but lacked a bit of the umami so I added a touch of salt. Fig, Thyme and Goat’s Cheese Galette from the One Tray chapter of “One Pot, One Pan, One Plant” by @we_are_food . My first contribution to the #rainydaybitescookbookclub Tray Challenge, hosted by @rainydaybites , and also sharing to #forgotttenrecipescookbookclub with @piastromexicankitchen, celebrating women in cooking this month. I made this easy savoury tart a couple of weeks ago when our autumn figs were at the peak of their very short season - a wonderful dish that showcases their sweet, jammy texture and flavour!😍 The salted, buttery, hazelnut shortcrust pastry is divine and so simple to whizz up handsfree in the blender!🤩 (This is actually the only way I ever make pastry to ensure it is not overworked by my heavy handiwork!😅)The dough has a quick rest in the fridge before rolling it into a circle and filling it with a blended and super tasty mix of salty goat’s cheese and rinsed capers, honey from our bees, fresh thyme leaves and parsley from the garden, lemon zest and juice, and black pepper. So delicious!😋 Sliced figs are laid generously on top (they do shrink quite a bit, so I overlapped them) and the edges of the pastry are folded over to create a rim. Preserved Lemon and Herb Baked Orzo 💕 Inspired by a Syrian yogurt-baked orzo, this dish gets it all done in one pot. I used my Le Creuset and changed the method slightly to sauté the veg first — in my case, garlic, leftover red onion, kale, asparagus — in olive oil with coriander, fennel seed, Aleppo, sumac, lemon, minced preserved lemon, salt and pepper, herbs. Added the orzo to toast in the same pot, then took off the heat and folded in yogurt mixed with an egg. Poured in boiling water. Then baked with the lid on for 25 minutes at 450 degrees F. Took off the lid and baked for another 5 minutes until crispy and golden brown on the edges. Served with chermoula, rose harissa, feta and olives. Delightful, healthy, and an easy one pot meal! We liked that the orzo got a nice bottom crust and became more rice like with this preparation. Take 4 medium sized potatoes and 1/4 cup peas and boil them. 2. Take the potato’s and peas and mash them. Then add salt, green chilli, ginger, lemon juice, garam masala and mix well. 3. finely chop coriander and add it to the mixture. 4. in a pan take 1/2 teaspoon of oil and heat it up in a pan. Once the oil has heated up, add cumin seeds and when crackled add potato and pea mix and mix well. 5. Once combined, take the minutes off the stove and cool completely. 6. Once cooled, take your puff pastry sheet out of the fridge and unroll it onto a baking sheet. Spread the mixture evenly onto the pastry sheet and then roll it and cut into small pieces. 7. Halloumi, Broccoli and Chickpea Bake 😋 A wonderful traybake from One Pot, Pan, Planet @we_are_food 👍 Oven roasted chickpeas are one of our favorite snacks or salad ingredients. We love them so this recipe was an easy pick for today’s #rainydaybitescookbookclub . The challenge was to cook a recipe from the traybake chapter and oven roasted chickpeas caught my eye. The chickpeas are oven roasted in ras el hanout (made my own from @epicurious ), the zest and juice of an orange and some olive oil. After ten minutes a block of halloumi, broccolini and pumpkin seeds are tossed in tahini, olive oil, orange zest and juice and added to the tray of chickpeas, then broiled till the halloumi is nicely browned. The whole pan gets a garnish of pomegranate seeds, parsley and the halloumi gets a drizzle of honey! Served with flatbreads and #dinnerisserved 😋😍😋. This Baharat Shakshuka Recipe is a go to for lunch or dinner Serves 4 Time: 30 minutes Ingredients: 1 Onion or 2 Shallots, finely sliced 3 Garlic Cloves, crushed 1st Freshly Spiced Baharat Spice Blend 4 Medium sized mushrooms, finely diced 1 Red Pepper, Sliced 400ml Chopped Tomatoes Handful of fresh Parsley and Coriander, finely chopped 4 Eggs 400ml Water Salt to season 1tbsp Tomato Puree 200g Feta Cheese Optional: Fresh Bread to serve Instructions Place a large pan on a medium heat and soften the shallots/onions for 5 minutes before adding the garlic and peppers. Next, add the mushrooms and Freshly Spiced Baharat spice. Continue to stir and cook for a further 3 minutes. Add the tomato puree with a dash of water, and stir well to coat all the ingredients, then add the chopped tomatoes. Use a wooden spoon to compress any big bits of tomatoes. Season with salt and half of the herbs. Add 400ml of water and allow to cook for around 5 minutes for the sauce to thicken. Using the wooden spoon, make indents in the tomato mixture and crack your eggs into 4 separate areas. Place a lid on top of the pan and allow to cook for 3-5 minutes. Check the eggs are cooked and then scatter the remaining herbs on top. Serve and scatter over the crumbled feta equally between each serving. This goes great with fresh Sourdough. For our last challenge from One Pot, Pan, Planet by @we_are_food, I had a hard time deciding what to post, but these spiced olive-oil roasted tomatoes with yogurt and herbs shouted pick me! Tomatoes are roasted for two hours in loads of olive oil with garlic bulbs and spices, then served on a spread of Greek yogurt and scattered with lemon zest and dill, all scooped on toasty bread. And there is lots of leftover infused oil for roasting vegetables or in salads. Other winners I made from the one tray chapter of this book were rhubarb and potato traybake and the leek and potato tray bake with romesco sauce. Will make both again. Van zichzelf is tofu een beetje saai, maar met wat kruiden of een lekkere homemade marinade kan je er oneindig veel lekkere creaties van maken. Piquant Smoked Paprika Pasta Bake from #onepotpanplanet by @we_are_food . Today we’re cooking from the “tray” chapter of this gorgeous book and I confess I’ve had difficulty choosing one recipe to share, as this chapter is full of incredible suggestions. This pasta dish was an absolute stunner. Super delicious, full of flavour, textures and so, so easy to prepare! We start by tossing chopped onion, fennel, garlic and fennel seeds in olive oil and cook it in the oven until it starts to soften. Lemon, Asparagus & Israeli Couscous Traybake from One Pot, Pan, Planet by @we_are_food Today's #rainydaybitescookbookclub challenge had us pick any recipe from the One Tray chapter of the book. I'm always looking for an excuse to make pearl couscous. Here it gets jazzed up with lemons, garlic, asparagus, spring greens, dill, sumac & chunks of halloumi cheese, and then thrown under the broiler until it all gets a glorious suntan. ☀️ Did my people like this? Eggplant Rollatini Recipe Cheesy Eggplant Rollatini Ingredients: 2 medium eggplants, sliced lengthwise into 1/4-inch thick slices Salt, for sweating the eggplant 1 cup ricotta cheese 1 cup shredded mozzarella cheese, divided 1/2 cup grated Parmesan cheese, divided 1 large egg 2 cloves garlic, minced 1 tablespoon chopped fresh parsley 1 teaspoon dried oregano 1/2 teaspoon dried basil Salt and black pepper, to taste 2 cups marinara sauce Fresh basil leaves, for garnish Directions: Place the eggplant slices in a colander set over a bowl or in the sink. Sprinkle salt over the eggplant slices and let them sit for 30 minutes to draw out excess moisture. Rinse the eggplant slices under cold water and pat them dry with paper towels. Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish. In a mixing bowl, combine the ricotta cheese, 1/2 cup shredded mozzarella cheese, 1/4 cup grated Parmesan cheese, egg, minced garlic, chopped parsley, dried oregano, dried basil, salt, and black pepper. Mix until well combined. Spread a thin layer of marinara sauce in the bottom of the prepared baking dish. Spoon a dollop of the ricotta mixture onto each eggplant slice and spread it evenly.
