Ricotta Pasta with Spinach
Ingredients :
8 ounces pasta (such as penne or fusilli)
1 tablespoon olive oil
2 cloves garlic, minced
4 cups fresh spinach leaves
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Red pepper flakes (optional, for added heat)
Fresh basil leaves, thinly sliced, for garnish
Instructions :
Cook pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add fresh spinach to the skillet and cook until wilted, stirring occasionally.
Reduce heat to low and add cooked pasta to the skillet, tossing to combine with the spinach.
Stir in ricotta cheese and grated Parmesan cheese until well combined. If the mixture seems too dry, add some of the reserved pasta water a little at a time until desired consistency is reached.
Season with salt, pepper, and red pepper flakes (if using), adjusting to taste.
Serve hot, garnished with fresh basil leaves.
