Ricotta Pasta with Spinach<br /><br />Ingredients :<br /><br />8 ounces pasta (such as penne or fusilli)<br />1 tablespoon olive oil<br />2 cloves garlic, minced<br />4 cups fresh spinach leaves<br />1 cup ricotta cheese<br />1/4 cup grated Parmesan cheese<br />Salt and pepper to taste<br />Red pepper flakes (optional, for added heat)<br />Fresh basil leaves, thinly sliced, for garnish<br /><br />Instructions :<br /><br />Cook pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.<br />In a large skillet, heat olive oil over medium heat.
