My husband worked 15hrs today.
So I had one of his favorite comfort foods ready when he got home tonight.
Low Carb Spicy Chicken Enchiladas. Recipe⬇️ ⬇️
Each Enchilada: 52gr Protein
16gr Fat
9gr Carbs
Low Carb Spicy Chicken Enchiladas
3lbs chicken (raw/cut in pieces)
1 Cup diced Red Pepper
1 Pkg dry Fajita Seasoning
8 "Egg Life" egg wraps (store or homemade)
15 oz can Red Enchilada Sauce
8 oz Sour Cream
2 Cups Shredded Mexican Style Cheese
2 oz diced Jalapeño Peppers
Saute' 1st 3 ingredients & fill Eggs Wraps, place seam side down in 9 x 13 casserole dish.
Mix Enchilada Sauce & Sour Cream, pour over Enchiladas.
Cover with Shredded Cheeses & top with Jalapeño Peppers.
Bake @ 350 for 30-40 minutes.
I plated his on a bed of Shredded Iceberg Lettuce, with Sour Cream on the side.
Got my Steaks ready to grill while his Enchiladas were in the oven.!! Lol
