My husband worked 15hrs today.<br /><br />So I had one of his favorite comfort foods ready when he got home tonight.<br /><br />Low Carb Spicy Chicken Enchiladas. Recipe⬇️ ⬇️<br />Each Enchilada: 52gr Protein<br /> 16gr Fat<br /> 9gr Carbs<br /><br />Low Carb Spicy Chicken Enchiladas<br /><br />3lbs chicken (raw/cut in pieces)<br />1 Cup diced Red Pepper<br />1 Pkg dry Fajita Seasoning<br />8 "Egg Life" egg wraps (store or homemade)<br />15 oz can Red Enchilada Sauce <br />8 oz Sour Cream<br />2 Cups Shredded Mexican Style Cheese<br />2 oz diced Jalapeño Peppers<br />Saute' 1st 3 ingredients & fill Eggs Wraps, place seam side down in 9 x 13 casserole dish.<br />Mix Enchilada Sauce & Sour Cream, pour over Enchiladas.<br />Cover with Shredded Cheeses & top with Jalapeño Peppers.<br />Bake @ 350 for 30-40 minutes.<br />I plated his on a bed of Shredded Iceberg Lettuce, with Sour Cream on the side.<br />Got my Steaks ready to grill while his Enchiladas were in the oven.!! Low Carb Spicy Chicken Enchiladas

3lbs chicken (raw/cut in pieces)
1 Cup diced Red Pepper
1 Pkg dry Fajita Seasoning
8 "Egg Life" egg wraps (store or homemade)
15 oz can Red Enchilada Sauce
8 oz Sour Cream
2 Cups Shredded Mexican Style Cheese
2 oz diced Jalapeño Peppers
