Sheet Pan Chicken Fajitas 🎉🌮❤️ Life is incredibly full right now. Spring sports for all 3 kids & coaching for me. Our evenings are filled with track practice, swim practice and baseball games. Dinner time is a rush and at different times every night. I’m all about easy, quick & healthy meals. I’ve been doing tons of Sheet Pan dinners this year and decided to experiment with making Sheet Pan Fajitas. They are so good and I’ve been making them a lot this year. Here is what you need:<br />- 1.5 pounds of chicken breast tenders<br />- 4 bell peppers, sliced (I use 2 red, 1 yellow & 1 orange, we don’t like green bell peppers)<br />- 1 red onion, sliced<br />- 1 packet of Fajita seasoning<br />- Lime Juice<br />- Olive Oil<br />On a cookie sheet in rows, place the chicken tenders, sliced bell peppers & sliced red onion. Drizzle with olive oil & lime juice. Sprinkle half the packet of fajita seasoning. Flip everything over and drizzle with more olive oil & lime juice. Sprinkle with the remaining fajita seasoning. Bake in a 425 degree oven for 15-20 minutes or until the chicken is fully cooked. Halfway through baking at about 10 minutes, I flip everything over on the pan so it gets cooked evenly. Then cut up the chicken. <br />Our favorite tortitalls to serve these with are the La Victoria Flour Soft Tacos, I grill them on our griddle for a couple minutes to warm them up. Top your fajitas with your favorite garnishes..we love monterey jack cheese, sour cream, salsa, guacamole & cilantro. I hope you love these as much as we do! I’m going to be making these again this Sunday for Cinco de Mayo! <br />If you have a good homemade guacamole recipe, send it my way...we have been experimenting, but haven’t found “the one”.
