When you think of cauliflower, think again. Our wholesome and satisfying Cauliflower Steaks defy expectations. Ingredients 1 teaspoon ground cumin 1 teaspoon curry powder ½ teaspoon crushed red pepper flakes 1 teaspoon salt 2-3 tablespoons olive oil or coconut oil, divided 1 small head cauliflower 1 cup diced butternut squash ½ small red onion, sliced ½ cup chickpeas, drained Directions Heat toaster oven to 450°F. In a large bowl, combine spices and salt. Add 2 tablespoons oil and mix well. Set aside. Slice cauliflower into ¾-inch slices to create “steaks.” (See tip below) Add squash, onions, and chickpeas to spice mixture and stir until well coated. Place vegetables on toaster oven baking pan. Add the remaining tablespoon of oil, if needed to coat the steaks. Add cauliflower steaks to the bowl and gently toss until well coated. Place cauliflower onto baking pan with vegetables. Place in oven and bake for 15 minutes; flip the steaks over and gently stir the vegetables. Continue to bake for 10 to 15 more minutes until cauliflower steaks and vegetables are tender. Serve immediately This recipe was developed for the 4 slice toaster oven. To make 4 servings in the 6 slice toaster oven, double the recipe. Set toaster oven to Stay On mode. Lemon Pepper Chicken 🍋 . I started off with marinating chicken thighs with 1 tbsp lemon pepper, 1 tbsp lemon juice, 1 tbsp olive oil, and 1 tsp salt for about 20 min. Then placed them in a baking sheet topped them with lemon slices and extra lemon pepper. Baked them for about 35-40 min in the olive until fully cooked at 400F. For the vegetables I did bell pepper slices, asparagus, and half chopped Brussels sprouts. Seasoned them with lemon pepper, salt, and avocado spray. I baked them in the oven at the last 15 min. The chicken came out soo juicy and delish. It’s such a mess free and easy dinners to make. The veggies came out nice and roasted which we really like. I don’t like my veggies so soggy and giving them a good roast is just so delicious. . Empecé marinar muslos de pollo con 1 cucharada de pimienta de limón amarillo, 1 cucharada del jugo del limón amarillo, 1 cucharada de aceite de oliva, y un 1 cucharadita de sal por 20 min. Another Thursday weeknight dinner. Quick and easy. Roasted Veggies with ravioli. I got my kids' favorite veggies (this week mushrooms were requested) cut/sliced to a similar size and roasted for about ten minutes with garlic. Sheet Pan Chicken Fajitas 🎉🌮❤️ Life is incredibly full right now. Spring sports for all 3 kids & coaching for me. Our evenings are filled with track practice, swim practice and baseball games. Dinner time is a rush and at different times every night. I’m all about easy, quick & healthy meals. I’ve been doing tons of Sheet Pan dinners this year and decided to experiment with making Sheet Pan Fajitas. They are so good and I’ve been making them a lot this year. Here is what you need: - 1.5 pounds of chicken breast tenders - 4 bell peppers, sliced (I use 2 red, 1 yellow & 1 orange, we don’t like green bell peppers) - 1 red onion, sliced - 1 packet of Fajita seasoning - Lime Juice - Olive Oil On a cookie sheet in rows, place the chicken tenders, sliced bell peppers & sliced red onion. Drizzle with olive oil & lime juice. Sprinkle half the packet of fajita seasoning. Flip everything over and drizzle with more olive oil & lime juice. Sprinkle with the remaining fajita seasoning. Bake in a 425 degree oven for 15-20 minutes or until the chicken is fully cooked. Halfway through baking at about 10 minutes, I flip everything over on the pan so it gets cooked evenly. Then cut up the chicken. Our favorite tortitalls to serve these with are the La Victoria Flour Soft Tacos, I grill them on our griddle for a couple minutes to warm them up. Top your fajitas with your favorite garnishes..we love monterey jack cheese, sour cream, salsa, guacamole & cilantro. I hope you love these as much as we do! Happy prep week to all you students! Remember to fuel your bodies and brains this week 🏃‍♀️📚🫶 This was a sheet pan supper that took 5 minutes to put together and let me relax on the deck while it was cooking. 😌 I seasoned both sides of the chicken with olive oil, salt/pepper, Old Bay seasoning, and a sprinkle of brown sugar. I did the same for the asparagus (minus the brown sugar) and baked them at 425 for 15 minutes. I was hoping the brown sugar would help the chicken brown up a bit more, but there’s still some good color going on! The potatoes are instant mashed potatoes! Recipe: One pan chicken, red pepper, almond traybake Ingredients: - 500g boneless, skinless chicken thigh - 3 medium red onions, cut into thick wedges - 500g small red potato, cut into thick slices - 2 red peppers, deseeded and cut into thick slices - 1 garlic clove, finely chopped - 1 tsp each ground cumin, smoked paprika and fennel seeds, slightly crushed - 3 tbsp olive oil - zest and juice 1 lemon - 50g whole blanched almond, roughly chopped - 170g tub 0% Greek yogurt, to serve - small handful parsley or coriander, chopped, to serve *Feel free to add any additional veggies you would like! Place the halved potatoes on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and toss to coat. Roast in the preheated oven for 20 minutes. Meanwhile, in a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper to make the glaze. Sheet pan dinner!!!! @emilykymes really popped off with this one!! So good & so easy, especially with our BFF the rice cooker🤪✨ INGREDIENTS ~Apple chicken sausage ~yellow onion ~red bell pepper ~Brussel sprouts ~Brocolli ~rice ~garlic powder ~garlic salt ~S+P ~olive oil Preheat the oven to 425. On a large sheet pan lined with parchment paper, add diced bell pepper, onion, Brussel sprouts & broccoli. Drizzle on some olive oil with S+P. Add the chicken sausage & place in the oven for 15 minutes. Take out your sheet pan on sprinkle on some garlic power & garlic salt. Place in the oven for 10 additional minutes & at the end broil on low for 2 minutes to crisp the broccoli. The rice is pretty self explanatory with the rice cooker, otherwise cook as directed.
