【澤乃井 無濾過生原酒】(さわのい) ＜フルーティー 高アルコールの 爽やかさ＞ お久しぶりの澤乃井さん。東京都青梅市・小澤酒造さんのお酒です。東京都は言え、お蔵さんがあるのは青梅市の市街地よりももうちょっと奥。山あいの自然の多そうなあたりです。JR青梅線・沢井駅のすぐそばで、その地名が銘柄名「澤乃井」の由来になっています。 澤乃井さんを前回飲んだのは2年半前、1合瓶「蔵べる」シリーズの「男酒」でした。 今回いただくのは、3月の季節限定酒。ラベルに蟹が描かれてるけど、お蔵さんは海からけっこう遠いので、これは沢蟹かな？ それでは飲んでいきましょう。 香りほんのり爽やかアルコール。カドのない気持ち良いアルコール感と、アルコール由来の甘さと、控えめフルーティーな酸。 口に含むと酸甘アル。リンゴ酸っぽいくっきり酸と、アルコール由来の糖の甘味と、最初からアルコール感がドンっ！その酸甘アルが広がって、アル感だけがさらに爆発。これは高アル！！ 後半出てくる苦味もアル由来な感じ。 温度が上がると苦味が立ってくるので、雪冷え(5℃)の方が好き。裏ラベルを見たら、19度。ああなるほど高アルコール ジブリで例えると「天空の城ラピュタ」のドーラの若い頃。ドーラの部屋の壁に肖像画が架かってるんですが、これがめちゃくちゃかわいい。でもいかにも勝ち気でパワフルな暴れん坊美少女です。 好き度：★★★★ 【DATA】 蔵元：小澤酒造株式会社(東京都青梅市) 造り：本醸造 無濾過生原酒 精米歩合：65% アルコール度数：19% ･･･ 高い！ 製造年月：2024年3月 ※ブログにはキャラ画像などを補完したフルバージョンを載せます。よかったら「こるね酒」で検索するか、プロフィール欄のリンクからお越しください。 #ジブリ酒 澤乃井 #東京の酒 #日本酒好きな人と繋がりたい #ジブリ #天空の城ラピュタ #japanesesake #sake #お酒が好きな人と繋がりたい #飲酒タグラム #ポン酒タグラム #愛酒クリーム #正杜屋

Definitely the best sake pairing I've had in DC, @kappodc is killing it. Interesting, delicious sakes that you rarely find at other places paired extremely well with their wagyu-centric cooking. The highlight of the pairings was @dewazakura_sake Tobiroku Ginjo Awa Usunigori with tempura soft shell crab. In contrast to most sparkling and nigori sakes, this was dry, ricey, and fruity, with a bit of astringency to balance. It both held its own but also cut through the rich fried crab. The pairing was matched by @zwshwey 's hospitality and service. 十勝 純米(北海道/上川大雪酒造) 洋菓子に合う日本酒。日本酒のペアリングについてまた一つ新しい世界がひらけたように思います。 またまたお久しぶりとなってしまいました。私事ですが就活が落ち着いたのでこれからは投稿頻度上げていきたいと思います。 関東圏で開催される日本酒イベントではよく見かける蔵である上川大雪酒造、金欠大学生な事もあり日本酒イベントでは目当ての蔵のみ目もくれず飲むため初めて飲みました。 こりゃあうまいです。めちゃくちゃうまいというよりも新しいし、多くのシーンに寄り添う酒だと思いました。 舌バカな私では一口目では分からなくとも飲み進めるとともにこれは違うぞ。特に鼻に抜ける香り、後口が他の日本酒と大きく異なります。まろやかさ？もちろん油ではないのですが味わいがこってり？としてるような。北海道らしいということなのでしょうか。 こちらの蔵は調べた限り独特な成り立ちでありまして、2016に三重県の蔵を買取、移転。北海道の3ケ所に蔵を設置し地方創生、6次産業化を標榜し酒づくりを行っています。 この3ケ所というのも緑丘蔵、碧雲蔵、五稜乃蔵と言いそれぞれ上川町、帯広、函館と大きく離れた場所に位置しています。 地方創生、6次産業化大賛成です。酒蔵が地域に根ざして街のスポーツチームのような存在になれたら良いのになとよく思っていました。地域を代表し、且つ地域の人は蔵を誇りに思って他の地域に自慢できるような。そんな関係が素敵ですね〜、地域のスポーツチームの試合で地域の日本酒とか飲めたら面白いと思うんですけどね。 話がそれましたがペアリングは冒頭に書いた通り洋菓子に合うと思いました。特に砂糖がわかりやすいお菓子や洋酒を使ったお菓子、アーモンドなどが使われた香ばしいキャラメル系などと合いそうです。共通項は甘みがわかりやすい事、甘いだけじゃなく一つアクセントが付けられる事です。 お酒自体の甘味は美味しいあまり強く感じないので甘味と合わせる事でお互いに邪魔せずに良いところを存分に味わえると思うのとアクセントがつくとその上でそのアクセントが際立って味わい深くなると思います。 具体的にはシュトーレン、フロランタン、サバラン、など面白そうです。 チョコ系や冷たいものはちょっと避けたいかも。もちろん甘いもの以外も合うと思います。せっかくなので今まで提案していなかったものを話してみた所存です。 色々試してみて新しい可能性を見つけていきたいです！最近日本酒とスパイスのお店増えた気がしますし！インスタを見てるとお家居酒屋的な感じでペアリングを楽しんでいる人を見て大人だなーとひたすらに憧れます。私も来年から社会人。初任給は親孝行した残りで日本酒のセラーでも買ってしまおうかしら。 個人的おすすめ度7/10 #酒 #日本酒🍶 #日本酒#日本酒大学生 #日本酒好きな人と繋がりたい #日本酒ペアリング #ペアリング #シュトーレン #フロランタン #サバラン #sake #sakelover #sakekampai #上川大雪 #上川大雪酒造 #北海道 #北海道酒 #十勝 #十勝純米 #上川大雪酒造株式会社碧雲蔵 #北海道日本酒

I talked about ageing sake earlier, but just to recap - it relies on the Maillard reaction, where sugars and proteins interact to produce darker colours and rich flavours like dried fruit, dark sugar, cocoa nibs or nuts.⠀⠀ 🍶⠀⠀ Altering any one component of the reaction changes its speed and intensity. For example, the way meat browns in a pan is also because of the Maillard reaction, and you can imaging how that browning will vary depending on the heat.⠀⠀ 🍶⠀⠀ Kijōshu has plenty of sugar... so that acts to accelerate the ageing reaction.
