The Sunset Inferno a lover of all things spice, tequila and the sunset back drop of the Brisbane river, I had to do a margarita for the #massenezbacardicompetition 45ml patron reposado, fat washed with chilli oil 15ml ginger massenez 30ml peach and agave syrup (2:1) 30ml lime juice using many ingredients more than once across the whole cocktail, chilli oil and chilli salt both made by myself with the chilli oil being used to fat wash the #patrón reposado and as a garnish) chilli salt( Chilly flakes, salt , sugar, fennel powder, star anise powder, cassia powder, ginger powder) using Crawley’s agave syrup and my own peach syrup in a blend as my sugar component and 2-3 slices of the left over peaches are muddled into the tin for an extra peachy kick #massenez150 #bacardi #massenez_au #paramountliquor @bacardi @massenez_au @paramountliquor @patron

The Lavender Stoke 30ml Bombay Premier Cru 15ml Bombay Citron Presse 15ml Massenez Elderflower Liqueur 15ml Lemon Juice 10ml Apple Juice 20ml Lavender infused Earl Grey Tea Syrup 5ml Creme de Violette Garnish - Purple Flower Petals When I first became a bartender out of all the spirits I served I was most drawn to gin, it's flavour and the endless possibilities for cocktails, but it wasn't until I worked in nicer bars and discovered Bombay that I really was able to enjoy a higher calibre of gin that opened my eyes to the beauty of the ingredients that go into my cocktails. This cocktail is an homage to Laverstoke Mill, Bombay's distillery, with its arched Greenhouses present across the sight that are used to grow the unique ingredients and citrus present in their spirits, and the value they place on adapting the environment into their distilling processes. The sight has always had a very calming and gardeny feel to me and is something I tried to capture with this cocktail. I picture the drink in hand while surrounded by green, leafy bushes and trees, with lemons hanging from the branches and a soft breeze blowing as you sip. I've used 2 different lines of Bombay to really capture the full character of citrus that plays such a part in enhancing their gin, complimenting it with Elderflower and Bergamot as well as an infusion of Lavender to draw out a bright, citrus and gardeny feel to the drink. #massenezbacardicompetition #massenez150 #bacardi @massenez_au @bacardi @paramountliquor
Massenez Competition A Country View Inspired by how to capture in a drink on what it is meant to be a Queenslander. This Serve is named after one of the street names i grew up on, which is near the 'Big Pineapple' on the Sunshine coast. 30ml Patron Silver 30ml Apple, Pineapple and Mango Acid adjusted shrub 25ml Massenez Liqeur de Pamplemousse 2.5ml Massenez Fruits de la Passion Garnish - Frozen Mango Slice - 3 drops Marigold & Saltbush Tincture - Saltbush Salt Rim Description Growing up both in England and on Sunshine coast from a young age I wanted to capture many different elements on what it is like to be a 'Queenslander'. Community, passion, and culture. These are a few of many words that can describe what it is to be not only an Aussie, but a Queenslander. I decided to use local ingredients which paired well with Massenez to create the serve 'A Country View'. All fresh produce ingredients were sourced from local markets here and are not only in Brisbane but across the Sunshine state. My idea was to create a refreshing short-served hybrid of a Margarita and a Paloma combined with a tropical thunderstorm. I decided to create an Acid adjusted shrub to capture the sweet and sour element that these two drinks have. Not only does this act as a substitute for any other citrus, it adds depth and flavor to the cocktail which other citruses cannot do. Ratio - 1:1:1:1 Pineapple, Mango, Sugar, Apple Cider Vinegar I ended up using a mix of 2 Massenez products as I felt both of the flavors felt like they provided enough to burst out from the other products while maintaining a composed feel. While thinking about the salt rim, I decided to source some salt bush salt and found that it paired extremely well with the flavor profiles which were presented in this serve but also added layers to this serve. From there i decided to add 'Marigold' to pay homage and respect to my connections back in the U.K. This flower is grown in both my regional town in England, but also on the Sunshine coast.
