WHELKS! A perfect version launches our superb meal at @lyleslondon. Cooked just enough to be tender, they're sweet & a bit briny. Dipped in a Vin Jaune Mayo's nutty acidity, they're rich bites. Whelks turn up in NYC (scungilli is usually whelk, not conch, in the northeast), but not often enough. More whelks, please! Chef James Lowe, the visionary chef who created Lyle's, builds his menus around UK heritage ingredients and food traditions (whelks were once common London street food). At lunch on weekends, Lyle's offers an expansive a la carte menu (dinner is a 4-course tasting). Thanks to regular @hchuaeoan, who seats us strategically, at a table just outside the open kitchen, we watch as course after marvelous course shows up. The meal is a revelation (particularly for C, who's newer to the joys of the London restaurant scene). We're fortunate in our timing - April means all sorts of fresh things happening in UK - but I'm sure we'd be dazzled in January too. SCHNITZEL! There's a particularly nice version at @40maltbystreet, a delightful wine bar in Bermondsey (London). It's a fat thigh, perfectly fried, juicy (this is much better chicken than the typical "schnitzel" cut). Served with raw celeriac, peashoots and a rich bacon gravy, it's a rich, hearty dish. Located in a railway arch, with trains periodically passing overhead, the place feels casual, but 40 Maltby Street is very serious about the food. From a little kitchen, Chef Steve Williams produces a constantly changing list of small plates, British-rooted, veggie-heavy. Cuttlefish, peas & wild garlic: spring, the sea, a lovely bowl of big flavor & texture (cuttlefish is meatier than squid, tender when cooked right). Like everything at @brawn49, it's fresh & clever, comfy & delicious. I remember the place as a great wine bar when I was spending much time in London (it opened in 2010). Now, perhaps in parallel with the neighborhood (so many new shops), it's a bit calmer, more restaurant - and that suits us just fine. Chef @edjwilson is full of food ideas, so the menu changes often (and the wine list is still terrific - as is the martini). We thoroughly enjoyed it all: - Veal & girolle ragu, with homemade tagliatelle - White asparagus, sauce gribiche - Sea bass, mussels, chard & basil - Cantabrian anchovies & rosemary oil - Folx farm salad leaves London, like NYC, is full of great places, clever chefs, enthused crowds. Beef Neck. It's a part of the cow that gets plenty of exercise, so it's more muscular - and, as a result, deeply, richly flavorful. When cooked right, all that connective tissue breaks down into gelatin... At wonderful @ahime_bologna, Chef @lorenzo.vecchia cooks the neck beautifully: pan, oven, rest, oven... low and slow, so it comes out wonderfully tender and rich. He adds sunchoke - chips & sauce - to produce a delightful dish. Earthy, with hints of sweetness, plus bones around the beef. Yum! We stopped in Bologna just briefly, so I'm thrilled we got to Ahime. It's just our sort of place: casual wine bar vibe, deep natural wine list, friendly service. This is a city with deep food history. Here, the food is creative and modern, executed perfectly but not fussily. They care about ingredients: lots of fresh veggies they've grown in their garden; meat from animals treated respectfully; no waste. Bravo! Piovra grigliata, cicerchia, pimentรณn (Grilled octopus, pea, paprika). One of many delicious dishes at @stappo_ve, a terrific wine bar in Venezia. It's a casual place (that takes food seriously), a "vineria con cucina," with indoor and outdoor tables, apread around a front bar & open kitchen. The natural wine list is deep, with lots of local deliciousness. The food is rooted in Venice, but worldly. Lots of great small plates! Antipasto: the traditional first course, small bites to settle in, with wine. In Venezia, at delightful @estrovinoecucina, the plate is a gorgeous, delicious combo of local seafoods: Crudo, seared fish & gambero rosso. They're beautifully, minimally cooked & seasoned; they're just right to start a meal about exploring the extraordinary wealth of local food & wine. After that superb start, we settle in for a lovely meal. SPAGHETTI WITH HAZELNUTS, UNI & BLACK TEA! First dinner in Venezia is superb. Amazing! Like everything we ate at terrific @localvenezia, the spaghetti dish is surprising & delicious. The components are wonderful together: funky, earthy, nutty... fun! @salvatoresodanochef believes in local ingredients & tradition - but he also likes some whimsical twists (plenty of hints of Asia). This is a perfect first meal for this visit to Venezia, a modern & exciting approach. Here's the full tasting menu, which we thoroughly enjoyed: - Cicchetti - served with the aperitifs - Donkey, murex (sea snails) and mushrooms (donkey was traditionally served by peasants in the Po Valley) - White celeriac from Veneto (it grows abundantly in Veneto) - the spaghetti - Risotto, broadbeans, pecorino and sweetbreads; using a local variety of rice called Vialone Nano, produced in the oldest rice husking system - Grouper, dry aged 15 days; then sous vide. Pasta, shrimp and... goat cheese ice cream?!? Yes! Plus ikura and herbs and crunchy crumbs! A superb pasta dish by @gionatabignotti at his wonderful @larucola2.0. Chef Gionata spent some time in NYC, cooking at San Domenico and Le Cirque, when they were the best Italian we had. In Sirmione, a charming town on Lake Garda, he has his own place, where he cooks whimsically, having fun with big flavors, rooted in Lombardy, but very creative. The restaurant offers several tasting menus, but the team was happy to surprise us with all sorts of things. It's clear that this is a chef who enjoys himself (he still has the NYC energy and the Jordans). Plus he has a team ready to execute beautifully. Octopus! Always a promising start. This one is thinly sliced, barely cooked, lightly sauced... yum! An excellent start to the fun "Contaminazioni" tasting menu at Il Fagiano in the @grandhotelfasano. @chef_maurizio_bufi draws on his roots in Apulia and the local flavors of Lake Garda to make clever, fresh, yummy food. How do you transform beef? At fabulous @ristorantelido84, you start with Bavette, the rich, beefy cut from near the flank. It's grainy & robustly textured, so it holds accompaniments - and Lido 84 believes in them: Duck fat, Gravy, Lard, Fermented Nebbiolo Skins & Testun (sheep) Cheese. Wow! All sorts of funky flavors converge, with multiple streams of aging, fat & meat calling out... [noted: everything is served on @ginori1735 plating; this one was pale pink] I raved about the first half of the meal yesterday. Here's the rest: - Chard Wrap, with Broccoli, Green Curry, Combawa - Veal Sweetbread with Rum, Honey & Old Style Mustard - rigatoni cacio e pepe en vessie (cheese and pepper rigatoni cooked inside a pig's bladder), cut open at the table - the Beef - Sweets, including a Cougin Amman and Bomboloni with gjnger. Paired with an amazing local limoncello. Chef Camanini has a magical ability to transform what look, at first, like ordinary ingredients. The flavors and textures surprise us course after brilliant course. The place is now nearly 10 years old and it shows up on lists of the world's best places, so reservations are tough. Unlike many insta-popular chefs, Chef Camanini doesn't need to adorn his dishes: no gold foil or caviar; one uni, hidden in a brown sauce. Oyster magic! At stunningly wonderful @ristorantelido84, the oyster comes on toast that's soaked in pine, laurel & vinegar. The nose tricks me: the sweet pine, the vinegar and the sea suggest maybe herring - but the dish is something else entirely. It's a plump oyster, slow cooked over charcoal so it's super juicy; it has the texture of a soft egg. The toast, also cooked on charcoal, is the real flavor carrier: nutty & crunchy, sweet & woodsy... the combo: amazing! We have the Oscillazioni (Fluctuations) Menu, plus a few more courses. Here's the first half: - amuses - a ball of Cuttlefish Jerusalem Artichokes, Smoked Eel Butter - with the consistency of sticky rice - the oyster - Pasta pepperone, stuffed with shrimp, plus Thai & Indian flavors, sealed with polenta & baked to al dente. The "Milanese" at @frangentemilano could be the dictionary entry: it's just right. A beautiful cutlet, cooked just enough; a tasty crust; a hint of gravy; mashed potatoes. No, it's not your typical NYC "Milanese" - because yours has the flavor pounded out, then batter caked on... Look, I like schnitzels and tonkotsus at least as much as the next guy - so I have no fear of breading & frying - but when you have beautiful veal, it should totally dominate. This is where I drift more Japanese: if it's not going on a sando, it's tempura (light & complementary). Ok, enough on that. Frangente is a classic local spot in Milan, a bistro if it were Paris, serving great versions of comfort foods. Cheeks rule! They're the tastiest pork... At excellent @torre_ristorante, Chef @lorenzomanda updates classic dishes. His piglet cheek is perfectly cooked. Served in a rich gravy with carrots and mustard, topped with a cabbage slaw, it's a wonderfully hearty dish. We thoroughly enjoyed all that we ate: - fusili pasta, genovese sauce and caciocavallo cheese - Crunchy fish (amberjack), asparagus, tons of herbs, herb mayo - veal terrine with lots of salad - crude with citrus & ikura - Pear, warm zabaione and almond ice cream - "Tarte tatin" and vanilla ice cream In truth, we came for the art: @fondazioneprada is a sprawling, inspiring complex on the outskirts of Milan. It reminds me a bit of Dia Beacon. The tower, designed by @rem.koolhaas, of course, offers great views of the city (and more space for art). The restaurant looks terrific, with pieces of Eero Saarinen, the old NYC Four Seasons, plus some Wes Anderson whimsy. There's a terrific cocktail bar, outdoor seats, excellent service, a crowd of well dressed art fans... It's fun - and the food is both yummy and suited to the place. The most beautiful RISOTTO (and wonderfully delicious too)! That's the Beetroot risotto with gorgonzola cheese sauce "Evolution" by @chef_enricobartolini, a signature dish on the tasting menu at his wonderful namesake restaurant in Milan. It's a dazzling meal to experience, by a singular talent. I started posting this amazing meal earlier. Every dish thrilled. Here's the middle part: - Radishes & ikura - Seaweed crusted turbot, beetroot and sea snails - Bottoni filled with olive oil and lime, octopus and cacciucco sauce [I will get to the rest of it later] We loved this meal for the rare combo of exuberant color, surprises and true deliciousness - across every course (I've included the focaccia for contrast). It genuinely stands out: extraordinary creativity, brilliant ingredients, perfect technique. A truly memorable meal, of the best we've had in a very long time. Chef Bartolini's story is impressive: from running his first kitchen in 2005, to a Michelin star in 2008 and a second in 2010. He opened the Milan flagship in 2016 and won 3 stars for it in 2020, bringing his total to 13. Green spaghetti, finished tableside! It's the wonderful finish to a first round of courses at superb @chef_enricobartolini at Mudec. The sauce - "Orsino" garlic, mustard, anchovies and caviar - is wonderfully rich, coating the pasta in veggies, the sea, umami.... yum! This lovely tasting menu starts with a series of elegant amuses, including a delicate saffron risotto cracker and a hearty crispy taco. We move on to some small plates: - White asparagus, orange blossom and parmesan cheese - Mineral Sphere, crystal grass and oyster from "Delta del Po" This was a brilliant meal, perfectly prepared and delightfully served. The staff is just right: elegant, informative, amusing. We chuckled repeatedly. This suits the food, as it's endlessly clever, colorful and surprising. The room is spacious, calm, airy. Wine & pork & beans! In Milan! Perhaps it sounds more elegant to describe our first savory snack in Milano, with late afternoon wine, in Italian: coppietta di Ariccia speziata y lupino gigante di Vairano. That's dried pork Roman style, deep red in color, sprinkled with chilli, fennel, salt & pepper. Plus a big, hearty bean. Wow - perfect snacking with wine. Kara Miso Tetsunabe: a spicy miso, cooked in a metal hot pot. We love the @bbf.nyc version with Mugifuji Pork Kalbi. Built around nicely fatty pork and gochujang, it's a tangy, meaty, delicious Korean-Japanese comfort dish. We eat lots of small dishes every visit. Obanzai! It's a Kyoto thing originally, built around home cooking and seasonal, local veggies. We eat lots of obanzai when we're there... and now there's a great casual obanzai platter at @bbf.nyc in NYC! This week's obanzai: Gobo Chips, Goma Ae, kabocha,Nasu Tatsuta-age (spicy fried eggplant), Unami Ikura (dashi soy sauce), Squid and Cucumber with Spicy Moromi Miso, Kabocha Inaka-ni, Snow Crab Stuffed Mushrooms. Awesome! This is important: we have had great obanzai in NYC, but always amidst fine dining meals. This is much more casual. BBF feels, in the best ways, like a diner (they reference Midnight Diner). This is a Japanese team, serving real Japanese flavors, in a comfy, low key place. We paired the platter with excellent sushi bombs (raw scallop & cooked salmon) and sake from the extensive list. Lots more to enjoy (for another post). BBF is an offshoot of @brooklyn_ball_factory. We visit the original Williamsburg spot regularly for terrific miso soup & onigiri by @erina_tabi. The LES branch is newer & bigger, with lots more seats. They serve a casual menu during the day and a bigger one at night, including the obanzai. We've thoroughly enjoyed all the food we've tried so far. LOBSTER + NOODLE, Southern Thai Style! The Pad Thai Chaiya at new @saitong.thai is sweet rice noodles, topped with a grilled lobster tail, a hint of cheese & lots of sides. It's a fun dish, full of flavors & textures. Yum! SaiTong just opened in midtown west. The chef, from Southern Thailand, cooked at Thai Villa. Here, he does a broad sampling of dishes from Southern Thailand, plus some fusion creations. I've thoroughly enjoyed what I've tried so far: - Nakorn fish curry salad with rice & cashew - Chumphon Pineapple Curry with mussels and basil, topped with grilled sea bass fillet - excellent cocktails The place is super cute (carved wood walls are really special) and the service is superb. Ichigo Daifuku! That's the classic spring MOCHI, made with red bean & fresh strawberry. I'm thrilled to say we have a great one in NYC. @norie_uematsu, a superb pastry chef, makes hers in classic style. Shiratamako, a short grained rice, produces a silky, glutinous, sweet mochi. Norie San lines it with red bean & fills it with a wonderfully sweet whole strawberry from Mie, Japan (thanks to @berry.japan & @ikigai_fruits). It's like a magic egg, with layers of flavor & texture. A delight! I ate my first mochi nearly 30 years ago, on my first visit to Japan, in a magical shop in Kyoto. I still picture the wall, with dozens of these pastel balls, each stuffed with something we had to try. We ate and ate... Though we're in Kyoto often, I haven't found that shop again... but I'm still chasing the great mochi. This one, at @momoyasoho, is certainly the best I've had in NYC. How do you make a pork chop even porkier? Wrap it in bacon! That's the good call at @nougatinenyc, where they cook a big Berkshire chop medium, so it stays pink & juicy. They serve it with Apple Compote, Cauliflower and Horseradish. Yum! Nougatine is the more casual neighbor to @jean_georgesnyc, off Columbus Circle. Dishes are a bit simpler, perhaps a bit more American mainstream. The quality is uniformly high, as at all @chefjgv places. Some other good dishes: - Black Sea Bass with Silky Fava Beans, Artichokes and Garlic-Lemon Nage - linguini with shrimp scampi, White Wine, Calabrian Chili and Herb - Asparagus with Sherry Vinaigrette, Mushrooms and Fine Herbes - Calamari with Salsa Verde, Parmesan and Lemon - Tuna tartare with Avocado and Spicy Radish, Ginger Marinade - Rhubarb meringue tart Nougatine shares an entry and reception area with Jean-Georges, so you can bypass the neighboring facility and its fans. We went there from the opera; the demographic overlaps. It feels nicely old fashioned: a pleasant bar, a big open room, an open kitchen (chefs in toques).
