Saint Peter🎩🎩 April 5th, 2024 (Part 02 of 03) 4. Southern Calamari, Yellowfin Tuna ‘Nduja Though it looks like a noodle, it is actually squid. The Calamari is sourced down in Queensland. When they arrived, they lay it flat and cook it over charcoal until it is medium rare. It is then sliced up to resemble Noodles. It is served with ‘Nduja made from scrapes of their Yellowfin Tuna and Olive Oil. 5. Line Caught Spotted Mackerel Rice, Summer Truffle, Black Pearl Mushrooms Line Caught Black Mackerel cooked gently on the side. Areas without skin is layered with Seaweed, so you kind of have an illusion that the skin is all around the fish. It is served with Rice, Black Pearl Mushrooms, and Summer Black Truffle. The broth also uses the Black Pearl Mushrooms. 6. 18 Day Dry Aged Yellowfin Tuna, Stix Farm Vegetables “Kandinsky” Another fish cooking technique popularized by Josh Niland, the same technique people use when also dry-aging beef. In this case, they dry aged Yellowfin Tuna for 18 days, encrust it with Juniper Berries and Black Pepper, and grill it lightly. It is served with various accoutrements made with Vegetables sourced from Stix Farm. They also serve it with a variety of sauce. From the outermost part, Macadamia, Preserved Lemon, Spiced Spinach, Curried Yellow Carrot Puree, and Verjus Orange Carrot Puree

Happy Sunday! I know I could start this rainy Saturday with this incredible French Toast from @capellabangkok breakfast menu. It was easily the best single dish I had on my trip earlier this month, yes even compared to all those Michelin or worlds 50 best places. Overnight soaked brioche, flattop grilled to order, perfectly caramelized and crispy on the outside but creamy and soft and moist on the inside, not requiring syrup or honey since the sugar coating naturally forms a layer of caramel syrup from the grilling, not too sweet not overly cinnamony either. Also perfect portion size. Saint Peter🎩🎩 April 5th, 2024 (Part 01 of 03) 1. Fish Butchery Charcuterie - John Dory Pate & Murray Cod Chorizo This is Saint Peter’s first course, but it has already shown how revolutionary Josh Niland’s take on fish is. This dish is a Charcuterie Board, but instead of using meat, it completely uses non-prime cuts of fish that would otherwise be wasted. From top to bottom, the stick consists of Marie Cod Chorizo, Yellowfish Saucisson, Striped Bass Prosciutto, Swordfish Belly Bacon, Rock Flathead Mortadella, and Yellowfin ‘Nduja filled Olives. All made in Josh’s other restaurant, The Fish Butchery. They also served a Tart of John Dory Pate topped with Madeira Wine Jelly. 2. St. Helens Sea Urchin Brioche Saint Peter sources the Uni from St. Helens, Tasmania. Lots of areas have their own Sea Urchins, but sadly some of them are just not as good as others. Truth be told, I had low expectations about this Sea Urchin, but I would say, this variety is one of the better ones. It is still briny, but not overly fishy. It is served with warm, toasted Brioche. 3. Salt & Vinegar Line Caught Blue Mackarel, Gordal Olive Brine, Fiore Bread, Cultured Butter The fish is a line caught Blue Mackerel from the coast of New South Wales. It is rested in Flakey Salt for an hour and then pickled in Champagne Vinegar for half. The “sauce” is a mixture of Picual Extra Virgin Olive Oil, Gordal Olive Brine, and Sardine Garum. It is served with a Sourdough and their Cultured Butter. However, owing to the size of their kitchen, they do not bake their own Sourdough, but source it from a local bakery.

Well it looks like a tourist trap and around 70% of the line were tourists and the chefs in the kitchen were mos def not Roman. But… and its a big BUT the food here is absolutely great. The carciofi fried crispy and golden and soft on the inside, the rigatoni amatriciana had very rustic cut guanciale strips, the cacio e pepe just right and creamy enough. Trippa romana was perhaps the best I had with soft tripe in a minty tomato sauce with pecorino. Beauty. Service is very efficient and welcoming and although the queue can get long they offer beer and aperol while you are waiting. After getting to know Yoshida-san personally prior to the world shutting down, it was an absolute joy to hear of the man's incredible accomplishment after relocating shop to NYC. As much as New Yorkers pride itself on the quantity of sushiya located within the few city blocks, quantity doesn't always translate to quality. Too often one find second string itamaes with a good marketing team riding the omakase hype to cater to the unwashed masses. But this, this is different. The pedigree of this space given, maybe the only shop in the continent with the talent and skill to punch in the same league as Japan's best. The dish of the night was the Escargot Raviolo in a parmigiano cream 8.3/10, the steak which typically is a hard thing to make a star of a menu was really something exceptional as well (credit to the team for that one). Lastly the caramel flan was truly an elegant finish 8.1/10. PS40🥤 April 5th, 2024 1. Africola - Mr Black Coffee Liqueur, Native Cola, Coconut Foam This drink came about when they were drinking Irish Coffee, and thought what if they flip it. The cold component under the hot one. The cold component is Mr. Black topped with Native Cola made with Wattle (a shrub commonly found in Australia). As for the hot component, it is a heated Coconut Foam. 2. Basque Old Fashioned - Whiskey, PX Sherry, Aromatic Bitters, Burnt Orange Oil. For this Old Fashioned, PS40 uses Monkey Shoulder that has been sous vide with caramelised, burnt Basque Cheesecake, hence the name.
