Il suffit d’avoir du lait pasteurisé (1L), un peu de levain rafraîchi ( 100gr), une bouteille en verre, un petit thermomètre alimentaire et une casserole. 🔸Faites chauffer le lait dans la casserole à 20 degrés ( max 30 degrés) 🔸mélangez le levain dans un bocal propre, avec un peu de lait tiède. Remuez bien jusqu’à dissolution du levain. Ce sera votre lait de prematuration. 🔸Versez ce mélange dans la casserole avec le reste du lait. Brassez bien quelques secondes. 🔸Laissez reposer 24h couvert et à température ambiante. Le lendemain : C’est prêt ! 🔸Versez le tout dans votre bouteille en verre préalablement lavée a l’eau bouillante. 🔸Placez ensuite votre bouteille au frigo. Votre lait fermenté peu se conserver une semaine entière. Le lait fermenté contient moins de lactose grâce au levain qui transforme le sucre contenu dans le lait en acide lactique.
