Every summer when I was growing up, we would circle the dates of the annual festival at our local Greek Orthodox Church on the calendar. For four days in August, we would venture down multiple times a day to get our fill of home-cooked Greek delicacies. My early favorites were pastitiso and tiropita; I later grew to love stifado and saganaki. I first learned to appreciate the art of the gyro at these festivals. Tucked away under a tent in the parking lot, far from the bustle of the main cafeteria, was the gyro stand. Served fresh and hot in the foil, this was the standard by which I judged all other gyros. Until I tried @greekgyroboston. We stumbled into The Greek Gyro on a whim on our way to meet friends at a brewery in Fenway. We were debating which of the many lunch spots we passed to stop into — until we caught wind of the incredible smell coming from their storefront. The classic gyro was simply the best I’ve ever had. The protein is pork, which I usually don’t love, but here it was cooked and seasoned to perfection. Sliced fresh off the rotisserie cone, it was juicy and tender with a wonderfully browned spiced crust and just the right amount of grease. The meat stole the show, but the supporting cast was excellent too. The French fries were tasty enough to eat on their own, not mere filler. The tzatziki was creamy and tangy but not too rich, and the red onion cut through the heaviness. Even the pita was warm, fluffy, and comforting. I would never have expected gyros to be a significant draw to go up to Boston, but I’m sure I’ll find my way back to Fenway for another giant pita pocket soon. Crambling through life one egg at a time with this "eggscellent" omelet pizza recipe. INGREDIENTS Eggs Ready-made 8" pizza crust Fresh veggie toppings Sour cream INSTRUCTIONS Beat eggs in a small bowl, then pour into a heated nonstick pan. When the top surface of the eggs is thickened and no uncooked egg remains, use a wide spatula to flip over the omelet to cook the other side. Slide the omelet out of the pan and onto the pizza crust, then top with fresh veggies. Add a dollop of sour cream, then cut the omelet pizza into wedges. Happy Mindful Monday! Thanksgiving is almost here and we have a challenge for you! LEFTOVERS CHALLENGE | Learn ways to save food, save money and make your next meal super easy. Leftovers get a bad rep, but they can be the key to a healthy, organized and thrifty week if done right. Learn how to elevate your leftovers. GO BIG Plan on big-pan dishes such as vegetarian lasagna and casseroles. Choose some large-scale recipes, such as chicken and veggies on a large tray or a big stew, pasta dish or soup. Then make sure you buy enough to make double servings. ADD VERSATILITY To keep your leftovers interesting, stock up on ingredients that can be easily prepared multiple ways. Potatoes can be turned into potato cakes, fresh-cut fries, hash or mashed. Other examples include: beets, carrots, eggs, pasta, beans, rice. These ingredients can add nice twists to your original recipes. SEE IT A NEW WAY Whatever your original recipe is, you can almost always reimagine it as a completely new dish. The key is to make sure you’re prepared. This means buying wraps, pie shells, phyllo dough, tortillas, broth and leafy greens. Then give your original meal new life with a completely fresh presentation. Check online recipes. It's #FeatureFriday! Meet Max! Max is one of our student team members. He helps all around the dining commons, and even helps with data entry. Something about Max is that he is an international student from China. He is currently studying his degree in Data Sciences. Another thing about Max is that he enjoys trying new foods from different cultures. He thinks it's so interesting to taste the flavors from different cultural backgrounds.
