There are donuts, and there are Greek donuts. . . . . Loukoumades have been a sweet treat for as long as I can remember, especially visiting Chios. These donuts are fried then drizzled with honey and topped with cinnamon. I only can eat 2 or 3 as they are filling. I enjoy mine with a DECAF @nescafegreece frappe with milk. Kattimeri 🧡 I shared a photo of this delicious Cypriot dessert a couple of weeks ago and so many of you have asked for our family recipe so here it is. It’s our version of a giant cinnamon bun. Needs a little bit of effort but it’s so worth it, not only does it look really special, it tastes amazing too! Syrup 🔸1 1/3 cup honey 🔸1 1/3 cup water 🔸1 cinnamon stick Simmer for five mins, set aside to cool Pastry 🔸3 1/2 cups self raising flour 🔸1/2 cup olive oil 🔸1 tsp baking powder 🔸1/2 tsp salt 🔸1 cup room temperature water 🔸1 cup extra thick double cream 🔸6 tsp ground cinnamon 🔸1/3 cup caster sugar Topping 🔸1/3 cup chopped nuts of your choice. Today I used almonds and pistachios. METHOD 🔸 In a large bowl mix the flour, oil, baking powder and salt. Combine well. 🔸Add the water and using your hands form a dough. Knead for a couple of minutes till it’s all combined but do not over knead. 🔸Mix the ground cinnamon and sugar in a small bowl. 🔸Preheat oven to 170C. 🔸Lightly flour a surface and place your dough on top. Using a rolling pin, roll out to a big circle till it’s about 2mm thick. 🔸Pour the cream on top and spread it out using a spatula till it covers all the pastry. 🔸Sprinkle the cinnamon sugar mix all over the top. 🔸Cut the pastry circle through the middle so you have two semi circles. Roll each half out from the edge to the cut side. When you have two long sausage shapes, twist them a little. (See photos) 🔸Lightly oil a round baking dish. 🔸Very gently swirl one of the sausage swirls and put in the centre of the baking dish. Take the second one and roll around the outside so you have a giant swirl, filling the baking dish. 🔸Sprinkle a tsp of water on the top and bake for 1hr. 🔸As soon as it comes out of the oven pour the syrup over and let it absorb and cool. Gently turn out of the dish and sprinkle with nuts. 🧡Enjoy!
