100 Mahaseth. Wow. Probably the best Thai meal I have ever had? I think maybe! Traditional Northern and Southern thai recipes elevated. You know you are in for a special experience when the free condiments brought to your tables includes - perfectly friend pork rinds - Som Tom (perfectly seasoned with no over powered fish sauce) - fermented crab salad (this one was a bit too spicy for me 😆) - 3 different types of dipping sauce (Thai chimichurri, Tamarind, eggplant) - various baby eggplants (white and purple), cucumbers and leafy herbs Menu is extensive best for sharing. Lots of exotic ingredients (frogs, pork ears, duck hearts, beef liver, aged tongue etc) and traditional Isan styled dishes (grilled, larbs, fermentation). As a solo diner and worried about being too adventurous… so I ordered the following - fermented rice stuffed chicken wings with green chili garlic sauce - fried chicken with prickly ash with green ginger shallot sauce - larb of duck breast with galangal and duck fat - Myanmar masala braised beef shank curry Complex is the one word to describe the flavours. Everything in balance with not one element standing out, which makes it so difficult to decipher the ingredients. Service was quietly proficient. Michelin Gourmand? Another Michelin Gourmand rated restaurant, that serves beef noodle soup. Again I am the first person here. I skipped the noodles even though they look damn good. Order the mixed beef soup which consists of beef shoulder, cheeks and tongue. The dark beef consommé is clear as day, yet so delicately intense in flavour. The generous slices of perfectly braised beef melt in your mouth tender. A nice sprinkle of greens for the soft crunch. I would consider this one of the best clear beef noodle broth that I have had in my life. So good that I am contemplating a return visit at some point during this trip. 9am. Sae Phun. Michelin Gourmand rated restaurant from 2019-2024 specializing in chicken stew on rice or crispy noodles. Crispy noodles you say?! You had me at hello. The sauce was thick and somewhat salty, but together with the pickled jalapeño and green chilli melds into harmony. If I had a quibble, it is that I would have preferred the premade chicken stew to be served a lot hotter. Especially since it acts to soften the noodles. I did an order of (jumbo?) prawn wontons that came swimming in a soya vinegar sauce that disappeared way too quickly. 【灣仔生記飯店搬址後首訪】 灣仔生記飯店今年一月搬新址，我有幸在最後一夜到訪過軒尼詩道舊址，那時已約定要去新店再吃餐飽，終於相隔兩個多月，三月的一個晚上，就來到灣仔三湘大廈的新址。 來到新店，就先試試新菜，舊店沒有燒味，新址就增設了「明爐燒味」，包括燒乳豬、叉燒、燒腩仔、燒乳鴿等。 「即燒BB豬」原隻賣HK$988，如果人數少，可以點例牌 (HK$268)，乳豬燒得皮薄香脆鬆化，油脂不算多，屬中等肥度的BB豬，不會太肥膩。 感謝朋友賜酒，當晚飲「氣泡清酒」，是一支有140年的太冠酒造釀製的，既有白葡萄酒的質地，又有日本清酒的米香和果香，是有餘韻的清甜，用來配燒味都相當夾。 「薑蔥鹹肉絲蒸一夜乾馬友」是菜單沒有的隱藏菜式，要預訂才有。話明是一夜情，就當然要經過一夜的粗鹽醃製，才夠咸香惹味。魚則用上油份充足的馬友，油香和咸香旗鼓相當。 生記有一系列招牌菜，全都是一些懷舊經典菜式，來到這類老店就不能不吃，次次都會點那幾款，但每次都不會嫌棄，今次就吃了其中四道招牌菜。 「生記招牌古法鹽焗雞」(HK$390)是米芝蓮推介之中的評審員最愛的菜式之一，以前去生記訂座時通常都會預訂一隻鹽焗雞，現時很多酒家做的只是鹽水雞而非鹽焗雞，真正的鹽焗雞是這個樣子的，用上三黃雞，油香嫩滑度還可以，雞味就差少少。 另一招牌菜是「懷舊蝦多士」(HK$268/8件)，有異於其他酒家例如鳳城的做法，生記的蝦多士較脹大，感覺蝦肉亦比以前同店吃的大件，炸得很酥脆。 「上湯枸杞浸厚切豬膶」(HK$188)又是每次來生記必吃的，幾乎是一想起生記，就想起豬膶。現在的豬膶比前為之厚切，吃來啖啖爽滑。 「家傳手磨生煎蓮藕餅」(HK$128/8件) 則是依然的鹹香惹味，這道真是好傳統的家庭菜，以前很多的媽媽會煮的，我自細在家都吃過不少，長大後現時最愛的菜式還是這類家常小菜，可重溫家庭的味道。 生記從來都話自己無甜品的，「白糖糕」是熟客們的暗號，限量而又不會放在餐牌內，郤一直都是招牌菜。「白糖糕」都是古早做法，清甜乾爽而不太甜膩，童年在屋邨經常吃到的，又正是大叔的回憶小吃。 凡事有兩面睇，搬新址前有人會覺得可惜，怕會保持不到舊大的風味，以今晚的食物來看，生記還保持到舊有的水準。而現時地點在兩個站之間，覺得由銅鑼灣站(銅鑼灣廣場出口)行過來較近一點。 地址: 灣仔駱克道353號三湘大廈3樓 全文在飛叔網誌及LINE Today HK! #飛叔飲食 #灣仔 #生記飯店 #中菜 #米芝蓮必比登推介 #foodpic #food #hkfood #hkfoodie #おいしい #美味しい #michelingourmand #michelinguidehkmo
