What does anaerobic mean? 🧐 In the coffee industry, we commonly see this term used as part of the processing information, but is it as complicated as it sounds? 🤨 The term anaerobic means to be without oxygen... simple! Its counterpart term, aerobic, means to be with oxygen. What this means for coffee processing is that any process (washed, honey, natural or experimental, including carbonic maceration) that ⬅️ removes the oxygen or access to oxygen from the coffee during its fermentation stage can be classified as having an anaerobic fermentation 👏 During fermentation, the yeasts and bacteria 🦠 inside the coffee mucilage breaks down, or metabolise, sugars and acids and converts them into other products, including organic acids, ethyl alcohol and carbon dioxide. Kenya 2024 trip was amazing! Collaboration efforts have resulted in great cup quality, and this is thanks to the hard work and love put in by all. It was also so nice to see our partner roasters bringing back some of the coffees purchased from Kenya, now on their pretty packagings, which surprised coffee producers a lot 🥰 . At the end of 2016, they purchased a vacant plot of land near Morgan Estate in Panama, where the land presents a unique opportunity for the trio to explore the possibilities of coffee, terroir and processing innovations. The land is stunning and sits on what seems to be an old dormant volcano. It feels like a natural amphitheatre or royal crown. In 2017 many exotic varieties, including Pacamara, Yellow Catuai, Sudan Rume, SL28 and Green Tip Geisha, were planted. On our latest origin trip to Honduras with @projectorigincoffee , we got to meet Rony, where our Los Pinos Microlot comes from. People like Rony play a huge role in linking communities of producers to us. This community of producers, despite beginning to grow high quality, heirloom varieties in the 1980s, have spent their entire lives selling coffee to local intermediaries for prices that are unsustainable, a model that's exploitative. Through this network that Rony has set up, the members of this community began training on producing micro-lots for sale to the specialty market. This brought us to the beautiful Honey-processed Typica microlot from Los Pinos. This coffee is clean and elegant, with white floral aroma. How cool is this!! 🇹🇱 We have been working on the construction of a wet mill in Aileu, Timor-Leste to provide infrastructure resources to the producers in the area, and these photos are showing us that it is nearly complete 👏 Our partnership in the project Orijem Timor, with @kape.diem @bppglobal and 1LM, are making some extraordinary things happen to elevate the coffee industry in Timor-Leste: not just for the quality of cherries, not just for the total volume of product, but also for social and women's opportunity 🙋♀️ This wet mill is an exciting project that demonstrates how progress, time, effort, care, and collaboration can really go a long way 🌱 But this collaboration doesn't end with our partnership as Orijem Timor - You are part of the collaboration as well.
