I scored a big pile of Luisa's that I'm really excited to try. They're 50g bars but they're quite blocky at around 9.5mm thick. That will either be great because you get a nice meaty piece, or it won't be good because the temper will be very hard and with minimal scoring on the bar (they break into just 4 12.5g pieces) it will be hard to break. After an eventful month in Peru, filled with inspiring experiences and newfound knowledge, I’ve returned home with a treasure trove of unique cacao samples, along with small batches of amazing chocolate, “honey,” and “wine” made with the cacao fruit pulp, crafted by innovative new friends at origin. Each of these samples brings a smile to my face, as I cherish every encounter deeply. The cacao samples include both parts of larger batches I’ve purchased and small batches of rare varieties, some of which I’ve never tasted before. Back in Norway, I’ll be experimenting with roasting profiles to create small, limited edition chocolate bars. In August, I’ll head back to Peru to produce larger batches of the cacao I’ve purchased in bigger volumes. This trip was truly special, not only for the exceptional cacao but also for the connections made. I’ve met countless passionate individuals in the fields, forging friendships with like-minded people who share my dedication to quality and sustainability. I’m thrilled to announce that my fantastic new colleague, Caroline @laurhammer , joined me for the final leg of this journey. It was the perfect introduction to her first weeks with the brand, spent exploring La Convención in Peru. I’ll give her a proper introduction later on. El periódico London Evening News publicó el 4 de mayo de 1979 una nota en la que los miembros del Partido Conservador de Reino Unido felicitaban a Margaret Thatcher (la Dama de Hierro) por su reciente nombramiento como primera ministra del país. Lo hicieron de una manera original: «May the 4th Be With You, Maggie. Congratulations», que se traduce como «que la fuerza te acompañe (Maggie). Felicidades», lo que fue tomado como un claro guiño a estas películas, ya que en ese año se estrenó 'Star Wars: Una nueva esperanza'. El Star Wars Day, ya ha quedado fijado en el calendario internacional de días 'frikis' y suele celebrarse cada año con distintas iniciativas, aunque el coronavirus hará de nuevo que las celebraciones tengan que dejarse de lado. Otro motivo a favor de la fecha del 4 de mayo es que el sonido de su pronunciación en inglés, 'May the fourth', es similar al de la mítica frase 'May the Force be with you' ('Que la fuerza te acompañe'), inevitable en las distintas películas de Star Wars. Per garantire ciò, ha creato un proprio modello di Direct Trade, creando un rapporto di vendita diretta con gli agricoltori soggetto a criteri specifici: maggiore è la qualità dei chicchi di caffè, più soldi guadagna il coltivatore. Was für eine Woche: Nastya & Basti (hier in unserem Coffeelab in der City) von unserem Schwester-Unternehmen @plotcoffeeproject haben auf der WORLD OF COFFEE in Busan, Korea die Kaffees unserer Freunde aus Honduras, Nicaragua, Kolumbien, Äthiopien, Kenia, Indien, El Salvador, Guatemala und Costa Rica präsentiert. Und wir hier in Hamburg konnten Platz 1 & 5 der @gemsofaraku ersteigern. Ausserdem haben wir unseren neuen Kaffees aus Kolumbien das erstmal geröstet und verkostet. Bestimmt erinnert Ihr Euch, dass Luis letztes Jahr vier Wochen durch Kolumbien gereist ist und viele neue, spannende Kaffees und Farmen entdeckt hat. Nun endlich ist der Container mit diversen Mircrolots in Hamburg eingetroffen und die Wahl für „unseren“ Kaffee - also fürs elbgold - ist uns echt nicht leicht gefallen, bei all den spannenden Sorten. Alle anderen Kaffees geben unsere Kolleg*innen von unserem Greencoffee Projekt übrigens an andere Kaffeeröster*innen weiter. Note from Nick: Last week I visited Mexico City for the first time! 🇲🇽 What a powerful place. Not only is it one of the biggest cities in the world, but the area has a long history of cultural significance and influence in Mesoamerica. That was evident even just from visiting the National Museum of Anthropology. It’s like a city in itself, with different buildings housing items from different areas and epochs of what’s now Mexico. I got to see metate stones used for grinding corn, cacao, and other foods, that were dated to the Middle and Late “Preclassic” periods, so roughly 900 BC to 250 AD. I learned about ancient trade routes like in the diagram here from around 1,000 A.D., showing the passage of gemstones, pottery, and other goods between what’s now the American Southwest and Costa Rica! I visited @cacaoparatodos for a cup of pataxtle (a.k.a. pataxte or Theobroma bicolor), a cousin of cacao that’s more pungent and nutty. It was amazing to learn about Mexico’s craft chocolate industry, which has a heavy emphasis on transparency and traceability (thanks also to @larifachocolateria). I sampled Polanco neighborhood restaurants with @mexicanfoodtours. I got a limpia (cleansing with incense, herbs, and sound) from Mexica dancers in the Zócalo. And I visited the small archaeology site of Texcotzingo, an ancient bathhouse with sophisticated aqueducts that was a place of retreat and meditation. Here I met with a local artisan who will be making molinillos (traditional wooden whisks) for Soul Lift Cacao very soon! I left an offering of ethical chocolate at an altar we found there. All in all it was a special trip that helped me to more deeply understand the historical context and culture behind cacao. I’m sure I’ll be back in Mexico City! But until then, I’m excited to be leading my first Cacao & Culture tour to Oaxaca City for Dia de los Muertos this fall. Visit the link in our bio to learn more 🧡
