Selbst mit einem erfahrenen Fahrer an unserer Seite war es mitunter schwierig den richtigen Weg zu finden. Nach einigen Umwegen erreichten wir schließlich unser Ziel. Herr Shi Shangming, ein von der lokalen Gemeinschaft bestimmter Bewahrer des Tee-Kulturerbes von Xigui Tuancha, empfing uns herzlich. Er erzählte uns ausführlich über die Geschichte des Teeanbaus in Xigui, die Besonderheiten der Teesorten und das einzigartige lokale Klima. Zudem führte er uns in die Herstellung des Xigui Tuanchas ein - ein auf spezielle Art als Kugel gerollter Pu Erh. Wir genossen nicht nur den Xigui-Tee, sondern auch das weiche und klare Xigui-Wasser. Dabei erfuhren wir, dass die Teefarmer ihren Gästen meist nicht das lokale Xigui-Wasser zum Teetrinken anbieten, da der Tee dadurch zu köstlich schmecken würde und zu Hause nicht mehr denselben Geschmack erreichen könnte☺️ Wir tranken Xigui-Tee und unterhielten uns bis spät in die Nacht mit Herrn Shi. It takes nearly 4 kilograms of fresh leaves to make 1 kilogram of dry tea, which is precious and expensive. Shaqing – Tuer le Vert Le 3ème processus de fabrication du thé Pu’Er, « Shaqing » en chinois, signifie « tuer le vert ». Au feu de bois, on fait monter la température du wok en bronze jusqu’à plus de 300 °C et on fait sauter les feuilles de thé dedans. Grâce au flètrissage (le processus précédant) on évite la brûlure. Cette manipulation permet d’enlever le gout de verdure (herbe fraiche), et de relever les arômes fruités et floraux, tout en contenant et en désactivant les enzymes contenues dans les feuilles. Kuashan - home of our Hummingbird tea cake We finally got out to visit the garden on Kuashan, and it was just as sweet and gentle and the tea itself is. The trees are tall and old but make no claim to being Gushu. The environment is hushed and patiently waiting for the harvest in a few days. Things were a little late on Kuashan (they’ve been harvesting in Xigui since March 21st), but that’s okay, every garden is different. 2023 Chan Tea of Taiji - Chawangbing This tea is the single-tree composition made from 500 + year old trees from the Chan Tea of Taiji blend. Only a few dozen cakes were pressed last year. It is a spring + autumn blend from 2022, pressed in 2023. The tea’s profile is elegantly delicate with notes of wild flowers.
