Went to the featured author event today about Zaatatri, a cookbook creation of love with recipes and stories from Syrian refugees living in the camp of the same name. An interesting, fantastic event. Last night I made #sambusak to donate for tonights @terry_buffington_foundation fundraiser. It’s a recipe I turn to again and again in this cookbook and I love the use of the nigella seeds and so much fresh parsley. While this is a Syrian recipe, it’s also found in Jewish, Moroccan, Palestinian and other cuisines. What I love about being Jewish with deep roots in my Middle Eastern identity, is how the food of my culture is deeply intertwined with the countries that border each other regardless of politics. I believe that knowing the culture, food, stories and heartache of a place is essential to see the humanity of others. I can’t stop with this #sumaccookbook by @anasatassi !!! I made the vegetarian #sambusak last weekend so last night for Shabbat, I made the kind filled with ground meat and spices. Friday’s are my #shabbatcooking time and I love spending my entire day leisurely cooking. Today I made #fatayerbisabanekh for the second time. The first time with @sami_tamimi @tara.wigley ‘s recipe in #falastincookbook and this time with @anasatassi ‘s recipe. Once again, just like yesterday I used my preserved lemons instead of fresh. I had some extra filling from the #sambusak rolls and so made some of the spinach pies with that filling too. Tonight I made #moutabal for the first time and this might be my favorite version of the #babaganoush I have grown up eating. This Syrian recipe uses Greek yogurt in addition to tahini. I didn’t have any fresh lemons so I used some that I preserved this fall. While the recipe doesn’t call for sumac, I couldn’t resist sprinkling some in that my friend @kristinlevierartist just brought me from Croatia. We sampled it tonight but tomorrow I will make pita bread and it will be part of our Shabbat #mezzespread . Last night I made #sambusak for the first time. I wasn’t able to find any fresh filo dough at the store so used up some rather crumbly stuff I had in the freezer but they turned out beautifully. I quadrupled the recipe for the filling and probably overfilled this first batch but no one complained. I can’t wait to make these again as soon as I can find filo locally.
