This is ‘merengada’. A milk base infused with cinnamon and lemon then mixed with stiff, glossy meringue. Spun in an ice cream maker, scooped and served with coffee granizada. Not bad I say. I’ll make this myself and cut the sugar in the granita. I think a more robust coffee granita with less sweetness and a dollop of iced merengada will work a treat. Who else is upping their granita game?
