I created a new recipe! Easy and Deelicious. Here we go: Sauté 1 lg finely sliced sweet onion for about 30 min. We aren’t caramelizing it but almost. In the meantime cube 2 sweet potatoes, drizzle with olive oil and sprinkle with salt and pepper flakes. Roast at 400ish for about 30 min watch them and turn them halfway. Back to the onions. Peel and slice 2 or 3 apples (I used Honey crisp and Holden Delicious) and add to the sautéed onions. Before serving add the sweet potato to the onion/apple mixture. Garnish with chives/parsley or green onion. For the pork chops I simply seasoned with Tuscan salt and chopped sage. Seated on the stove and finished in the oven again at 400 degrees. Lazy Saturday called for some snacks. Fried Mozzarella Sticks. Ingredients: 1 ½ cups Panko ½ teaspoon Italian seasoning ¼ teaspoon garlic powder ½ teaspoon ground black pepper ¼ teaspoon table salt 2 large eggs ½ cup all-purpose flour 6 Mozzarella String Cheese Sticks cut in half Vegetable oil for frying Marinara sauce for dipping Recipe: 1) Pour crushed panko into a shallow dish and add Italian seasoning, parsley, garlic powder, pepper, and salt and stir to combine. 2) In a separate, shallow bowl, crack 2 large eggs and beat with a whisk or the tines of a fork until scrambled. 3) Pour all-purpose flour in yet another shallow bowl. 4) Working with one at a time, dip the stick in the flour and shake off any excess flour. Then dip in the beaten egg and let any excess drip off. Finally, dip in panko crumb mixture, making sure the entire cheese stick is coated with panko. 5) Place a wire cooking rack on a baking sheet and place breaded mozzarella sticks on rack. Once all sticks have been dipped, transfer to the freezer and chill for at least one hour. If you are chilling for longer than 1 hour, after 1 hour remove from freezer and place in an airtight container then return to freezer. 6) While sticks are still in the freezer, Heat oil over medium heat until you reach a temperature of 350F (175C) then remove sticks from freezer. 7) Fry sticks, until golden brown (about 1 minute) then remove to a paper towel-lined plate to cool. Back on a health kick this evening. Salad Saturday, I jazzed it up with chargrilled chicken, avocado, roasted bell peppers, low-fat feta cheese and spring onion. I dressed my salad with organic extra virgin olive oil. I've just come back from Amsterdam. We didn't do much research into restaurants and thought we'd go with the flow. We ate fairly well and queued for the frites and stroopwafel and most of our meals were served on bread or between bread. All good but my girls and I ended up craving some vinegary, crunchy salad. Galletas de mantequilla con fondant o chocolate🤗 INGREDIENTES 2 huevos 350 gramos de harina 1 cucharadita de esencia de vainilla 1 cucharadita de levadura 100 gramos de mantequilla 200 gramos de azúcar Gotas de chocolate Fondant de color azul y rojo ELABORACIÓN Primero mezclaremos la mantequilla con el azúcar (si el azúcar es glas, la masa quedará más suave) Luego añadiremos los huevos y la vainilla y seguiremos mezclando. A continuación, en otro bol, tamizaremos la harina mezclándola con la levadura. Por último, iremos añadiendo poco a poco la harina a la masa de mantequilla e iremos removiendo hasta que todo quede integrado. Cuando la masa sea manejable, la envolvemos en film transparente y la dejamos como mínimo una media hora en la nevera (yo la dejé toda una noche). Después, en una superficie enharinada, voy haciendo la galletas (ver las fotos en publicaciones anteriores). En el horno, no las dejo mucho tiempo.
