Jerk&ginger marinated chicken thighs with harissa&smoked paprika mashed cauliflower with cashew nuts
Ingredients:
150-180gr chicken thighs
1 whole cauliflower
handful of cashews
Seasonings: salt&pepper, smoked paprika, grounded ginger, harissa, jerk seasoning
Salad (I used 1/2 avocado and handful of cherry tomatos)
1. Marinate the chicken thighs with jerk, ginger, s&p, and some olive oil. Let it rest for at least 30 minutes.
2. While chicken is marinating, wash and chop the cauliflower and boil it until soft (8-11 minutes). 3. When boiled place it to an empty bowl, add cashew nuts, grounded harissa, smoked paprika and a bit of salt. Mash it with any masher you have.
4. Pan grill chicken thighs until desired color.
5. Serve it on a plate with any salad which comes to your mind! :) Enjoy your Monday dinner!
