Radiatori in a marscapone-miso cheese sauce. A "new" approach (at least to me) for a quick stove-top mac-n-cheese that was as delish as it was easy. Just use some reserved pasta water to adjust the sauce to your liking. About 4:1 marscapone to miso (or even less miso depending on salt content of your miso) And I'm digging this pasta shape btw - radiatori. A decent bite-size, hangs onto sauce, and maintains a nice al dente texture at core even if the ridges carry-over cook a bit in a hot sauce. Anyway - easy rich mac-n-cheese in minutes. I used roasted mushroom as a mix-in, but sautéed would be better. The earthiness of shrooms pairs well with the savory from the miso. Lots of options tho. I'd steer clear of bacon or pancetta here, simply because you would be adding to the salt already prevalent with miso. Anyway, Velveeta? Felt inspired after A Taste of New Orleans last weekend and decided to make a Cajun-esque pasta this week. Did I have a recipe? No. Did that matter? Not at all. Started by blackening some chicken, making sure to heavily season enough that I wouldn’t have to add anything later to the pasta, then sautéed the cajun trinity in the remnants. Added in sliced sausage to that, then a bit of flour to make a type of roux that soaked up all the bits in the pan, and followed that with a bit of beef stock. Added back in the sliced chicken, a pint of half and half to make it creamy, and finished with the cooked pasta and a bit of the starchy pasta water. Topped with grated parm, this dish hit on every note I hoped it would. Creamy, spicy, savory, and oh so good. Reminded me of the Louisiana chicken pasta dish at the Cheesecake Factory, which has always been a favorite going back 17 years when I worked there. Plnené conchiglioni 🍽️ 📝 Potrebujeme: • cestoviny conchiglioni • 100 g špenátu • 400 g syru ricotta • syr Niva • strúhaný syr • 500 ml paradajkovej omáčky • cibuľu • cesnak • oregano 📝 Postup: Cestoviny varíme približne 10 minút, scedíme a necháme vychladnúť. Na oleji opražíme cibuľu s cesnakom, pridáme paradajkovú omáčku, oregano a chvíľu povadíme. Zo syrov a nasekaného špenátu pripravíme plnku. Omáčku nanesieme na dno zapekacej misy, poukladáme naplnené cestoviny a vrch posypeme syrom.
