After a hard workout, marathon, or other competition, I always crave a burger and fries!  For me, a simple black bean burger usually does the trick! <br /><br />Here’s a quick and easy recipe: 🍔🍃<br /><br />Ingredients:<br /><br />- 1 can (15 oz) black beans, drained and rinsed<br />- 1/2 cup breadcrumbs (use gluten-free breadcrumbs if needed)<br />- 1/4 cup finely chopped onion<br />- 1/4 cup finely chopped bell pepper<br />- 2 cloves garlic, minced<br />- 1 teaspoon ground cumin<br />- 1 teaspoon chili powder<br />- Salt and pepper to taste<br />- 1 tablespoon olive oil<br /><br />Instructions:<br />1. In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth but still some whole beans remain.<br />2. Add in the breadcrumbs, chopped onion, bell pepper, garlic, cumin, chili powder, salt, and pepper. Mix until well combined.<br />3. Divide the mixture into 4 equal portions and shape each portion into a patty.<br />4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.<br />5. Serve the black bean burgers on buns with your favorite toppings like lettuce, tomato, avocado, and/or regular/vegan mayo or mustard.
