Easy Spinach Rice
*1 cup Basmati rice
*2 cups broth (chicken or veggie)
*1 teaspoon salt
*1/2 teaspoon garlic powder
*2 cups fresh spinach leaves, finely chopped
***Directions:
Combine rice, broth, salt and garlic powder in a pot.
Without the lid, bring the pot with the rice and broth to a boil. (Medium high to high heat)
Once the broth is boiling, reduce to a simmer and cover with lid. (Medium heat)
Cook rice until it is tender, about 15- 20 minutes.
Once rice is cooked, take off the heat.
Stir in the chopped spinach.
Let the rice sit for 5-10 minutes, with the lid one, to gently cook the spinach.
