🍴Green Goddess Bowls with Tofu I love a bowl with diverse flavors and a GOOD sauce. The sauce is key to tying it all together and this one is made with yogurt as the base, so you’re sneaking in some extra protein. It’s quite versatile too: dressing, veggie dip, over chicken, for a pasta salad. You can use whatever ingredients you have on hand to make the bowl — I used spinach, roasted zucchini and carrots, chickpeas, tofu (extra firm, baked) and quinoa … sprinkled with a few pepitas and microgreens. Bright, refreshing and perfect for lunch or dinner! For the sauce: 10 ozs plain Greek nonfat yogurt 1/2 cup parsley 1/4 cup chives 1/2 lemon 1 tspn garlic powder Salt and pepper to taste Blend all ingredients. This is what I ate after my morning workouts this week: protein overnight oats with banana or blueberries + Skyr yogurt. For me, my post-workout meal is part of my daily routine. Here's everything my almost 2 year old ate in a day. Sharing this just as an inspiration for any moms who are running out of meal/snack ideas for their toddlers because same😅 I don't have any rules on what or how I feed my child (except for limiting added sugar and processed food), but I do try to include a good balance of protein, carbs and fat from all food groups. Some days it looks colorful and appetizing, and some days it is a plated leftover. One of the British 🇬🇧 traditions I enjoy are 🍽️ Sunday Roasts. Full dinners of roast beef, pork or lamb with cooked potatoes, onions and carrots. I was raised in the 🇺🇸 States and some of my most memorable mom meals were 🍽️ Sunday beef “pot roasts”. Lord Crispy and I stopped in a wonderful pub on a Sunday, while last traveling in England, 🇬🇧 and I had forgotten that Sunday meals were roast meals. Easy Spinach Rice *1 cup Basmati rice *2 cups broth (chicken or veggie) *1 teaspoon salt *1/2 teaspoon garlic powder *2 cups fresh spinach leaves, finely chopped ***Directions: Combine rice, broth, salt and garlic powder in a pot. Without the lid, bring the pot with the rice and broth to a boil. (Medium high to high heat) Once the broth is boiling, reduce to a simmer and cover with lid. (Medium heat) Cook rice until it is tender, about 15- 20 minutes. Once rice is cooked, take off the heat. Stir in the chopped spinach. Let the rice sit for 5-10 minutes, with the lid one, to gently cook the spinach. This quick meal is a sure way to make hubby proud! 
For the shrimp: in seasoned butter, add:
• Garlic powder 
• Salt/pepper
• Paprika
• Minced garlic
• Soy sauce 
• Ginger paste 
• Rice wine vinegar 
- I quick boiled it in salted water and a tablespoon of butter for about 2-3 mins before transferring it to a hot oiled skillet. In the skillet you want to add butter and seasonings. I used, paprika, pepper, minced garlic, garlic powder, ginger paste, soy sauce, & a tsp of rice wine vinegar. Sautee shrimp in the mixture for about 4-5mins and remove from heat. 
 Cilantro lime rice:
• Culantro 
• lime/lemon
• Salt/pepper 
In a large pot, add oil and butter until melted. Add in washed rice and sauté for 3min. Add Culantro seasoning and lime juice. Cook for another 2mins. Salt and pepper; Add in your water and bring to a boil. Reduce heat after 5min - on low until rice is tender. 
 Roasted Asparagus: 
• Salt/Pepper
• Minced garlic
• Garlic Powder
• Oil 
Pre-heat oven to 400 degrees add asparagus to a sheet pan. Coat asparagus in oil and seasonings. Toss until completely coated and cook for 15min.

Hi 👋🏻 I’m Megan, a mom to a sweet one year-old, wife to a hard-working half Persian from Houston, and a full-time product manager in the microbiome/biotech industry. Balancing work, family time, and cooking/caring for kiddos is no joke. And, I don’t feel like I see enough representation out there on this platform of what it’s really like to get meals on the table after having commuted 60-90 minutes each way to the office. So, I’m here for just that. To create a little space to make working mamas feel supported. My goal is to showcase my little kitchen heroics/tricks that make dinner on the table easier. I’ll also show how I pack my son’s meals for his babysitter (his Nana) and my grocery hauls, new finds etc. when possible. There won’t be a lot of fancy reels or long posts (besides this one typed in my car before starting my long commute). It will just be posts and stories documenting this lifestyle and hopefully providing some support for other working parents. We eat predominantly plant-based and I’m so excited to share so many of the recipes I’ve found on this platform and love for quick meals. Comment below to tell me something about you. Dinners of the week🍴 1. Hiyashi Chuka (Japanese cold noodles, one of my favourite noodle dishes ) 2. Mapo Tofu (didn’t quite like how this turned out but was my first time trying to cook it) 3. Rigatoni Bolognese (added extra cheese and it was so good) 4. A balanced snack should be more than just a handful of your toddlers goldfish 😜 if your snack has carbs you want to make sure it has protein along with it so that you don’t spike your blood sugar and wind up hungry and a short time later. A good balanced snack would ideally have a protein and fiber source to help you feel full and hold you over till the next meal. These snack ideas in this thread all consist of healthy fats, carbs, proteins, and fiber, plus they are mainly Whole Foods which means loaded with lots of nutrients which is perfect for pregnant or postpartum Mamas 😉 . Some other ideas you could toss in: 1. Tuna salad (made with Greek yogurt) 2. Guacamole/avocados 3. Any and all fruits 😋 4. Lunch meat 5. Dried fruit (look for no sugar added) 6. Trail mix 7. Pepperoni 8. Olives 9. Pickles 10. Hummus 11. Roasted chickpeas 12. Nuts of any kind 13. Popcorn 14. Homemade oatmeal bites 15. Pinwheel roll ups 16. Quesadilla bites . #mommealmonday - chicken, leek and rice soup from @smittenkitchen , BLT and chocolate chip muffins from @halfbakedharvest To be honest, mixed reviews on those muffins. Ranging from 4/10 to 36/10.
