Easy Mexican Fried Rice Recipe 🤤 ⬇️
Spicy Mexican rice with ground beef
Ingredients:
1 tablespoon vegetable oil
1 small white onion, finely chopped
2 cloves garlic, minced
1 cup long-grain white rice
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups chicken broth
1 cup frozen mixed vegetables, thawed
1/2 cup frozen corn, thawed
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Directions:
Heat oil in a large skillet over medium heat. Add onion and garlic and sauté until softened, about 3 minutes.
Add rice, chili powder, cumin, salt, and pepper. Stir until rice is well coated with oil and spices.
Pour in chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 18 minutes.
Stir in mixed vegetables and corn, cover, and cook for an additional 5 minutes or until rice is tender and vegetables are heated through.
Remove from heat, stir in cilantro and lime juice. Serve hot.
