Easy Mexican Fried Rice Recipe 🤤 ⬇️<br /><br />Spicy Mexican rice with ground beef<br /><br />Ingredients:<br /><br />1 tablespoon vegetable oil<br />1 small white onion, finely chopped<br />2 cloves garlic, minced<br />1 cup long-grain white rice<br />1 teaspoon chili powder<br />1/2 teaspoon cumin<br />1/2 teaspoon salt<br />1/4 teaspoon black pepper<br />2 cups chicken broth<br />1 cup frozen mixed vegetables, thawed<br />1/2 cup frozen corn, thawed<br />1/4 cup fresh cilantro, chopped<br />Juice of 1 lime<br /><br />Directions:<br /><br />Heat oil in a large skillet over medium heat. Add onion and garlic and sauté until softened, about 3 minutes.<br />Add rice, chili powder, cumin, salt, and pepper. Stir until rice is well coated with oil and spices.<br />Pour in chicken broth, bring to a boil, then reduce heat to low.
