It’s almost competition day! 🔪 BC Culinary Apprentice of the Year is happening at VCC Downtown campus this Friday Sept 15th. Competitors will need to create a three-course meal of 5 plates in under 3.5 hours to be enjoyed by the judges and invited guests. The winner will also be awarded with a cheque for $2,000! Meet Chef Simon Dufresne, who will be competing for the title. ⭐ Simon Dufresne Born and raised in Vernon, Simon began his culinary journey at Okanagan College where he received his Culinary Arts Certificate with honours. He has also been honing his skills in competitions as a member of the National Junior Culinary Team from 2020-2022. Recently, he celebrated his success at the 2023 National Young Chefs Challenge in Niagara Falls! Very humbled to be have the great Chef Bruno as our lead tasting judge. His amazing career expands over 5 decades! There’s a reason he is respectfully called “The Goddather” Chef Bruno Marti began his career in Switzerland before moving to Canada where he was employed at the Queen Elizabeth Hotel in Montreal. After working as Executive Chef for Cara Operations, he was appointed to the position of Manager, Catering for C.P.Air, based in Vancouver – a position that he held for 12 years. He is now Chef and Owner of the well-known La Belle Auberge Restaurant in Ladner, B.C. In 2010 La Belle Auberge was rated by ‘Zagat’ as the best fine food in Vancouver, In 2012 after 32 years at La Belle Auberge he decided to take retirement! Still not giving up all the work he was involved concerning Chefs and young Cooks. His first international competition experience came as Team Captain of the Western Canadian Team in Frankfurt in 1976. He created the first regional team {provincial team} that was allowed to compete at the culinary Olympics in Germany. He was Team Manager for Team Vancouver in 1980 in Germany, Team Member for Team Canada at the competition in Osaka in 1983 and Team Member of the World Champion Team Canada, at the Culinary Olympics in Frankfurt in 1984 – a win over 32 other Teams from around the world. He was Team Manager for Team Vancouver at both the 1988 and 1992 Olympics, for Team British Columbia from 1997 – 2003 and Manager of Team Canada at the 1996 Olympics, winning 3 gold and 1 bronze medals. I was born and raised in Fort Langley. I live around farms and had a very nice garden in my backyard, giving me a taste for local fresh home grown food. I would have fun trying to make delicious food with what was growing outside. That fun turned into a passion and I wanted to learn more. After high school I took my professional cook level 1 at Vcc and then my level two. After working a few places close to home I started at pier 7 restaurant and bar as a Jr. sous chef. I have learned much working under talented chefs and plan to continue learning from them, as well as going on to complete my level 3 and get my red seal. As an advocate for culinary tourism, The Sunday Times named her one of the "World's Most Extreme Foodies". Mijune also judges The Canadian Grand Prix New Product Awards, Bocuse d'Or Canada National Selections, Air Canada's enRoute Best New Restaurants, Canada's 100 Best Restaurants, Taste Canada Awards, BC Product of the Year Awards, Vancouver Magazine Restaurant Awards, Hawksworth Young Chef Scholarship, and many other notable awards. Born and raised in Vancouver, BC, Mijune [mē-june (like the month she was born in)] started her food and travel blog. Her hobby quickly turned into a full on career. It led her to her own “Follow Me Foodie” column in the WE Vancouver newspaper, regular segments on Global Morning News, CTV Morning Live and other media outlets. Meet Chef Kate Gonzales, who will be competing for the title this Friday Oct 28. ⭐Chef Kate Gonzales “Although Vancouver born and raised, my Filipino roots influence my type of cooking. Overall, I generally find my food to be modernized, visionary and fun! However, while apprenticing under Chef Derek Bothwell (@chefderekbothwell), I have learned and sparked knowledge about "Farm to Table" and sustainable farming. I completed my first year of culinary school through a program called Youth Train in Trades Program for Culinary Arts during my Senior year in Secondary school (2019). I then attended VCC, in which I ultimately secured my certificate in Professional Cook 1. While in school, I had the opportunity to work at Honeysalt, located in the JW Marriot Parq Vancouver Hotel; to where Ihoned and elevated my culinary skills. This led to me being awarded Employee of the Year (2020), as well as being promoted to Chef de partie. To advance and further my career, I then attended and later obtained my diploma in the Professional Cook Program at Northwest Culinary School (2021). Aside from currently being a private chef, I am also working in the fashion industry internationally; as my passion for the art of food and fashion go hand in hand. I look forward to a future where I could gather all my experiences and knowledge, to create dishes that represent me as a person instead of solely as a chef. Here's another chef competing for the title! ⭐ Chef Abhishek Chhettri "I am originally from India. And my curiosity about world cuisine brought me to Canada in 2019. When I was sixteen cooking was something like a bobby trap inside me and I was keen learning about culinary arts, so I use to spend most of my time with my grandmother while she was cooking. She was my true inspiration behind my chef career. I started my professional cooking journey in 2013, after graduating from a culinary school, I got my first job at “The Leela Kempinski Hotel” as a Kitchen supervisor. Later for my career growth I have worked with few top hotel brands including Accor, Taj group of Hotels and Fairmont hotels. My specialty is European cuisine, mainly Italian as it reminds me of all the fresh ingredient straight from my grandfather’s kitchen garden. Being raised in farming background family, I love to cook with fresh and simple ingredients. My favorite food is the handmade Tagliatelle pasta with creamy Alfredo sauce and home cooked Chicken curry with some steam rice. For me cooking is the feeling of nourishing yourself, it gives us the ability to be creative and most of all it connects yourself to your heritage and bring back old memories. Auch Lehrlinge von Fill waren beim technischen Lehrlingswettbewerb der Sparte Industrie - Wirtschaftskammer OÖ mit dabei und konnten direkt in der eigenen Lehrwerkstätte am Bewerb teilnehmen.
