This usually happens on 3rd March of every year, but priority had to go to the little one this time, which was why we decided to make a trip to Yilan first, before coming over to Taipei. First things first, Happy Birthday to my wife and best friend @chery1cheryl 🎂🎁🎉 Last night, we finally had time to ourselves and celebrated her birthday at @raw_taipei albeit 3 days later. Dinner was a feast of sense made even finer by impeccable service and an upscale ambience. It's been almost 10 years since I've had food curated by chef @andrechiang_sg. Best of the Year menu at Raw Taipei by chef Andre Chiang. Always enjoy this annual best-of-best special feature selections from all four seasons. This year included the popular winter Aomori Week collaboration, Originality in Spring, Autumn Herbal v2 to Summer One & Only. [ Stories ] I was very privileged to have met Chef Andre, his wife Pam and their dog Lucky a couple of years back, before they left for Taiwan from Singapore 🇹🇼🇸🇬. One fine day, I received a call from Josiah, the film director sharing about the movie Andre & His Olive Tree about a scene where Pam and Lucky were enjoying a char siew bao from @beanosingapore at Everton Park. Lucky loved our Beano bao and ate it almost everyday 🐕💕 I remembered being really amused that even after Lucky had finished eating the bao, he would still sit down outside the shop looking attentively at the bao steamer; refusing to budge even though Pam was tugging Lucky to say goodbye to us 😁😁   After watching the movie, I was so moved by the journey and the story of Chef Andre and Pam 🙏🙏🙏 If you haven’t watched it, I would highly recommend it! His name was Chef André Chiang. I read up on his profile & chanced upon his book #octaphilosophy. As I flipped through the pages, I was amazed at the level of intricacy & thought process to each dish. And there I saw it.. the charcoal dough stick. At that point, I had been thinking how I could reinvent a traditional food like You Tiao. The next day, we did some experiments & #charcoalyoutiao was born. I immediately wrote to Chef André to thank him. By standing firm in his beliefs and living a life consistent with his core values, he inspired someone like me. To my surprise, he wrote back! Chef André was generous, kind & supportive. Even from afar, his words inspire me and they move me to achieve greater things for myself and my company. For every creation in You Tiao Man since, we’ve always asked ourselves “is product truly what we believe in? does it stand true to our values?” We found that when we do things that aligns with our core values, it very often succeeds. In 2021, we finally have a chance to watch the film Andre and his olive tree. It was deeply moving and poignant. I have great admiration for Chef André as a man who refuses to be defined by his own accolades. He believes that it is more important to be brave & stand by what you believe in. •The story of Charcoal You Tiao• In 2018, someone told me about this chef who was giving up his Michelin stars and closing down his restaurant in Singapore. His name was Chef André Chiang. I read up on his profile and chanced upon his book #octaphilosophy. As I flipped through the pages, I was amazed at the level of intricacy and thought process to each dish. And there I saw it ... the charcoal dough stick. At that point, I had been thinking for quite some time how I could reinvent a traditional food like You Tiao. The next day, we did some experiments in the kitchen and the #charcoalyoutiao Tiao was born in May 2018. I immediately wrote to Chef André to thank him. By standing firm in his beliefs and living a life consistent with his core values, he inspired someone like me. To my surprise, he wrote back to me. Chef André was generous, kind and supportive. Even from afar, his words inspire me and they move me to achieve greater things for myself and my company. We love our night out at @raw_taipei with @vincentcychen and @helenhcchu The design is not only beautiful but also functional. The first thing you notice is that gorgeous bar, the next thing is the scent of hinoki (Japanese cypress). 📍 Raw 2020秋季菜單 漢方 . 石蟳/海膽烏魚子蒸蛋/吐司片 第六道料理 蒸蛋搭配著蟹肉非常好吃 包在旁邊薄薄的吐司片裡口感更是一絕 很捨不得吃完但還是一下就吃完了😭 . 這道料理搭配的soup pairing 是陳皮燉檸 很溫暖的煲湯非常喜歡~ - 第七道應該算是主餐的一部分 黃鰭鮪肋/八寶粥/明太子 實在很難想像如何把魚肢解的這麼像肉 吃起來有生魚片的口感 搭配旁邊的燉飯也好喜歡~ . 非常fancy的tea pairing Cacao 是很紅茶口感很有香氣的一個茗品 . 第八道主!餐! 葛瑪蘭黑豬/埔里香草/奶油南瓜 光聽Joey 介紹口水就快流下來了 吃酒槽跟巧克力長大的豬 烤的剛剛好 再搭配一小片膠質滿滿的豬尾巴 立馬完食🥺🥺🥺 . 最後一張是soup paring 的干貝鵜鶘還有甘草黑豆 原諒我已經忘記他是搭配哪個主餐了 不過相信服務生就對了! 送上來的時候就要立刻喝~ 我們干貝鵜鶘不小心放涼 喝了就覺得偏鹹不佳 拍照的同時也要掌握吃飯進度r~~~ #Raw #rawfood #taipei #taiwan #江振誠 #chefandrechiang

📍Raw 2020秋季 漢方 秋季的主題 ‘’不是以中藥入菜 而是把東方的食材重新組合成為法式料理’‘ 即使已經看過食評 還是很為每一道料理驚喜 . 照片太多了 我慢慢發囉 . 第一道前菜 秋竹莢魚/麻糬茄/芥菜花 很精緻的一個小塔 吃起來很清爽的生魚片料理 一吃就完全理解為什麼服務生說菜單上會寫詳細的食材內容 因為要是他沒寫 很可能真的吃不出來是什麼~ . 單點的麵包 $150 真的外皮極脆 內裏極柔軟 搭配好吃的鮮奶油堅果粒 是真的很努力克制自己不要吃太多怕後面料理吃不下~ 麵包也是唯一可以外帶的食物 還附上加熱說明真的相當貼心❤️ . #Raw #rawfood #taipei #taiwan #江振誠 #chefandrechiang
