One of them is the Fabled Rooster, the brainchild of chef and veteran Shaun Holley. Trained at Le Cordon Bleu and an alum of several restaurants around town, Holley launched his food truck in 2016 before moving operations into the Minneapolis food hall Graze Provisions + Libations in March 2021. The menu is filled with Low Country classics, many of which are smoked low and slow overnight, resulting in a bountiful pile of juicy meat that’s just the ticket on a chilly midwinter day. Brisket ($21) is served in thick, jiggly slices with a choice of sauce, a decision that isn’t as easy as it may sound. The Carolina Gold is a lively rendition of the mustard-based sauce, with just the right amount of Southern-style twang. But, with this rich meat and its peppery crust, it’s best to hit the sweet heat with the Yeehaw Mesquite sauce. The smoke enhances that rich beef unctuousness and the little bit of sweetness rounds out those spicy kicks. (J.S.)

Took some much needed time off to enjoy life, but ready to get back into the saddle. Pictured is the Buffalo chicken Mac and cheese from @twomixedupmn featured in @grazenorthloop and their chocolate chip cookie. The Buffalo chicken Mac is a rich tasting food, but also features honey to hold it down and was absolutely delicious to try. The mixture of heat from the Buffalo sauce and sweet from the honey was so savory to the pallet. The cookie was massive as shown in the picture and was soft and very enjoyable after the Buffalo Mac. This is the food of Hmong chef, @yiavang70, a James Beard award nominee, Iron Chef challenger, host of Food Network's "Stoked", host of "Feral" (streaming on the Outdoor Channel), and owner of @unionhmongkitchen , @slurpnoodleshop and @vinaimn (opening date tba). Did I miss anything, chef!? 🙈 Yia Vang was born in a Thai refugee camp and is a member of the nomadic Hmong people. As it happens, the Minneapolis and St Paul area is home to the largest Hmong population in North America. I found this out by researching Minneapolis in preparation for my trip there for @thegreatnorthernfestival. There was no way I was going to visit without having Chef Vang's food. Pic 1 -- from Slurp Noodle Shop: pork and greens, a dish that every Hmong kid grew up eating, according to one of his posts. This dish hits all the right notes: meaty confit pork belly, fresh herbaceous notes from the basil and cilantro, tangy mustard greens, a zippy spike of jalapeno, and slurpy noodles nestled in a glorious pork bone broth. 👌🏻 Pic 2: From Union Hmong Kitchen @grazenorthloop -- a dish called zoo siab (pronounced "zhong shia"). You get your choice of protein and a side (I went with Hmong sausage and fried Brussels sprouts👌🏻👌🏻), purple sticky rice, pickled vegetables and lettuce. The idea is to put a little bit of everything in a lettuce leaf and eat it like a little wrap. This is an interesting dish because you get something different with each bite. Fantastic. Also pictured is their coconut lychee colada which I am now officially addicted to. Lord help me, that is delicious stuff. Pics 3-5 Graze | Provisions + Libations: a lovely two-level space that houses about 8 local food and drink businesses—Union Hmong Kitchen being one of them. The venue has a variety of places to sit and eat/drink, or read a book, or play board games. They have a beer pong league and a smattering of other events going on. Gorgeous space. Great Vibe.
