At the heart of Indonesian cuisine is bumbu bumbu, a spice paste traditionally made with a mortar and pestle, but modern cooks—like me!—prefer the food processor. There are many different types, but base genep (bah-ser gehr-nep), is a very special Balinese bumbu. Base genep, like all bumbu bumbu, uses shallots and garlic, but it is the most ingredient-packed of them all! Chef Yudi of @dapurbalimula taught me how to make his version of base genep, but, of course, every Balinese grandma has her own version. Use it to flavor fish, duck, chicken, stews, sate—just about everything! Here’s my recipe: 𝘽𝙖𝙡𝙞𝙣𝙚𝙨𝙚 𝙎𝙥𝙞𝙘𝙚 𝙋𝙖𝙨𝙩𝙚 (𝘽𝙖𝙨𝙚 𝙂𝙚𝙣𝙚𝙥) 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨 5 oz shallots, peeled and coarsely chopped 8 cloves garlic, peeled and smashed 2 long, fresh red chiles, such as Fresno or cayenne, stemmed and seeded, if desired 4 fresh red Thai chiles, stemmed and seeded, if desired 4-inch piece fresh turmeric, coarsely chopped 2-inch piece fresh ginger, coarsely chopped 1/2-inch piece galangal, coarsely chopped 2 lemongrass stalks, outer layer removed, tops and bottom root ends sliced off (reserve the tops), tender white bulbs chopped into thin slices 4 tbsp coconut oil, divided (or canola or safflower oil) 1/2 teaspoon shrimp paste (may substitute with fish sauce) 2 makrut lime leaves 4 cloves, finely ground 1 tsp grated nutmeg 1/4 tsp freshly ground black pepper 𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨 Step 1 In food processor, combine shallots, garlic, red and Thai chiles, turmeric, ginger, galangal, chopped lemongrass bulb, and 2 tbsp of coconut oil and shrimp paste, if using. Pulse (don’t process) until smooth paste resembling cooked oatmeal is formed (coarse bits are fine). Step 2 In a large skillet/wok over medium heat, melt 2 tbsp of coconut oil. Add spice paste, tossing to prevent burning; cook until fragrant, 3 to 4 minutes. Add reserved lemongrass tops, lime leaves, cloves, nutmeg and black pepper. Stir every few minutes; adjust heat as needed to prevent burning, until it turns golden brown, about 30 minutes. Remove from heat and cool fully. Discard any large herbs, transfer to a jar and refrigerate.

Needless to say, I have a pretty extensive collection of recipes from my mom. Not all of them made it into my cookbook for various reasons. But I’d still like to share them! Here’s one for: *𝑷𝒊𝒔𝒂𝒏𝒈 𝑮𝒐𝒓𝒆𝒏𝒈 (𝑩𝒂𝒏𝒂𝒏𝒂 𝑭𝒓𝒊𝒕𝒕𝒆𝒓𝒔)* In Indonesia, you can find a pisang goreng seller on just about any street corner. It’s no wonder because it’s so tasty! The batter turns crispy on the outside, the banana is sweet and tender on the inside. Not any banana will do. There are over 200 different varieties of bananas in Indonesia. My mom Julia used pisang raja (king bananas) to make this delightful snack. Saba bananas and plantains are the best substitutes, but plantains are the easiest to find. Ingredients: 2 very ripe plantains 1 cup all-purpose flour 1/2 teaspoon baking soda 1/8 teaspoon fine salt 1 large egg 3/4-1 cup water 2 tablespoons sugar Vegetable oil for frying Directions: 1. Halve plantains down the middle then cut crosswise into ¾-1-inch-thick half-moons. 2. Sift flour, baking soda, and salt into a large mixing bowl. Make a well in center and add egg and 3/4 cup water. Whisk until there are no lumps. Stir in sugar. The batter should be similar to pancake batter and coat the back of a spoon. If it’s too thick, add more water, a little at a time. Fold in plantains. 3. Heat 1 inch oil in heavy skillet over medium heat until shimmering hot. Using a ¼ measuring cup, scoop batter with about 4 fruit pieces into hot oil. Cook two or three fritters at a time, making sure fritters are free to move. Fry, flipping halfway, until golden-brown, 1-2 minutes. Use slotted spoon or spider to remove from oil, and drain on wire rack or paper towels. 4. Scoop out stray pieces of batter before frying next batch. Repeat until batter is finished. I'm thrilled to announce that my newest cookbook “Mortar and Pestle” is coming August 2024! The project of my heart, “Mortar and Pestle” is the one cookbook I was meant to write. Most of the recipes are my mum’s, some are riffs, some are mine. Regardless of where they came from, they are all a part of me and who I am. I can’t wait for you to cook from it and experience the taste memories of my childhood! I first wrote the proposal for "Mortar and Pestle" in 2008, before my first cookbook “The Asian Grandmothers Cookbook” launched. After multiple submissions and countless rejections, I pretty much gave up hope that my book would ever be published. But in 2021, my agent sent me a message that started with: “You know I often equate this whole process to something like dating.
