It’s a Wonderful Wednesday so I’m sharing this Malay style beef stir fry in soy sauce, aka Daging (beef) masak (cooked in) kicap (soy sauce). Our stir fry is a bit different to your “western or Chinese style” stir fry. Soy sauce was introduced to our culture by Chinese traders & settlers to Malaya yonks ago, & since then it has been one of the essential ingredients in our cooking (though my late mother was a purist, she’d refuse to call any dishes that had soy sauce as Malay dishes—> she’d say Malaysian dishes instead). This stir fry use aromatics & spices; for example, I marinated the sliced eye fillet beef in tumeric, coriander powder, ginger powder, oyster sauce, soy sauce & black pepper for a few hours to tenderise the meat & get the flavour seeped through the beef. We also tend to use sliced potatoes in some stir fry (half fried first), I also added carrots (leftovers). I sautéed the blended ingredients (shallots, ginger & garlic) with whole spices (cardamom pods, cloves, cinnamon & star anise) until fragrant. Then I added the blended dried chillies (“cili boh”) with a bruised lemongrass, cooked for a few minutes before adding the marinated beef & mixed them together. Once the beef was heated, I added the kicap manis, oyster sauce, black pepper & tamarind paste with a bit of water. Once the mixture started to thicken up, I added the bird’s eye chillies & sliced onion & cooked until the onions were just softened, & add the spring onions. The end result was a glossy, sticky, slightly sweet, spicy & tangy stir fry with absolutely tender beef & al dente veggies. Mon Chèri said that was the first time he had this dish (my bad for not making this previously) & he loved it! Fishy Friday featuring this Asam Pedas Siakap, aka Sour Hot Barramundi (literal translation; or Spicy Tamarind Fish Stew) 😁 that I made on Wednesday. I’ve made asam pedas so many times & have featured in instagram so many times too, purely because it was one of mom’s favourites. I thought of her a lot lately & the best way to honour her is to cook all the food she loved & taught me over the years. As I mentioned in the previous posts (2023), this was the last dish I cooked for her before returning to Australia & she passed away 2 weeks later. I also made this dish 3 days after she passed to have with my family on our final gathering of the year. The broth should be sour & hot, obviously, as the name suggests. The heat comes from dried chillies & aromatics. The sourness comes from tamarind paste & tamarind slices that I put in. Another important ingredients are the bunga kantan (torch ginger, Ginger Flower, Red Ginger Lily, Torch Lily, Wild Ginger) & daun kesum (Vietnamese mint leaves). I only had frozen bunga kantan, but couldn’t find Vietnamese mint so I used Thai basil leaves instead. Meat on a plate featuring eye fillet & chicken nibblets that had been marinated in satay marinade for over 30 hours. When I say satay here, it is not your Australian style satay marinade ( “satay sauce” or peanut sauce rubbed on the meat); my Malaysian inspired satay marinade is made of typical aromatics (lemongrass, tumeric, galangal, ginger, onion & garlic), spices (fennel, cumin, coriander), vege oil & seasoned with salt & sugar. The aroma from the aromatics & spices are so good, the meat (especially the eye fillet) is soft & tender (better than the steak I had at Establishment 203), pack full of not so overpowering flavours, so the meat flavour can still be appreciated. There was no need for sauces/ dressing/ jus required for both meat & salad as the marinade did all the work. I wished we had a Habachi grill to get that extra beautiful charcoal flavour. I used the excess spices marinade as Wombok salad topping; pan fried until golden & crunchy (this was GOLD!). The steak & chicken were cooked to perfection. I craved a chicken salad but I wanted to skip the real chicken and the cholesterol-laden Thousand Island and mayo, so I just whipped up a big bowl of vegan chicken salad with pan-fried soy chicken, homemade unsalted trail mix (roasted almonds, walnuts, pistachio and sunflower seed kernels) and @alceneromy balsamic vinegar + extra virgin olive oil vinaigrette for dinner — which was supposed to be at 6.30 pm but it went 1 hour late because rain puts me on idle mode 🤣 If you're getting started on balsamic vinegar as part of your diet, always ensure that the vinegar is made in Moderna, Italy. Only those from Moderna are considered genuine. A bottle may cost you up to RM50.00 (depending on brand and retailer) but for its superb health benefits such as being rich in polyphenols (antioxidants) and helping to keep your post-meal blood glucose from sudden spike, think of it as a long-term health investment. Um almoço tão tarde mas saboroso hoje á @bartolobakehouse ❤️ Eu comeu o Pastel de Bacalhau com Cured Salmon Tiborna e finalmente, o legendario pastel de nata com um pouco de canela em pó. The bacalhau cakes are perfect albeit tad salty (normal because I had it in Macau many moons ago), the Tiborna is tão delicioso and of course, the Pastel de Nata is superbly flaky and not too sweet.
