🎣🥑 Spicy Salmon and Avocado Bowl This fresh fish dish is truly delish! It’s great for meal prepping or replacing your favorite Asian-inspired take-out. This recipe was actually one of the first ones I created by bringing together a few things we had in the fridge. It’s not any sort of culinary revolution, but simply ingredients with a modern twist. Never underestimate what you can do with a few staple ingredients! Ingredients: • 3-4 fresh salmon fillets or 1.5ish pounds • 1 cup cooked rice • 1 medium-large avocado, diced • 1 green onion • 1 tbsp white or apple cider vinegar For the sauce: • Spicy Asian-inspired sauce Steps: 1. Preheat the oven to 400 degrees. 2. Line a baking sheet with parchment paper. 3. Slice one inch of onion whites and add into a small bowl. 4. Add enough vinegar into the small bowl to cover the white onions and set aside to let soak. 5. Start cooking rice according to the instructions provided by the rice brand you’re using. 6. Skin fresh salmon if needed and cut it into one-inch cubes. 7. In a medium-sized bowl, create the sauce (spoon out a few tsp of sauce to drizzle at the end). 8. Add salmon cubes into the sauce and combine until salmon is coated. 9. Pour salmon and sauce on the baking sheet and separate any salmon cubes that may be stuck together. 10. Bake for 20-25 mins until salmon is cooked (flip salmon cubes at 10 mins) to avoid burning. (Note: I like to cook the cubes even longer when I can to give the salmon a blackened style texture.) 11. When the salmon is done, take it out of the oven to cool. 12. In the meantime, cube avocado, season with salt and pepper, and set it aside. Add a twist of lime for extra freshness! 13. To serve, place rice into the bottom of your bowl and top with salmon cubes, vinegar-soaked onion whites, chopped green onions, and avocado cubes. Drizzle with the remaining sauce. Enjoy! — PS! Our version of Carnitas Tacos this fiiiiine #tacotuesday!! My 12y/o wanted his taco to be the 'feature photo' for this post. He even prepped it with green onions to make it "fancy". Only issue is he left out the most important topping! @mezzetta jalapeños!!!! Pork Loin generously seasoned with @whitebullsbbq Taco Uppercut and refrigerated overnight. Throw it in the slow-cooker (fat on top) on low. Top with 5 garlic cloves (minced), 1-2 freshed jalapeños (sliced) and the juice of 2-3 freshly squeezed oranges. Once it reaches temp, pull and throw half back into the juices. Toss the other half in a preheated frying pan with Olive oil and fry until crispy. Return to crockpot and stir it all together so the crispy bits are evenly disbursed. Prep your tacos to your liking and dig in!!! You know it’s a busy day when you’re multitasking by fixing your hair and eating your lunch in the bathroom. I’ve had places to go, and do things all day lol. Not the way I planned this post. Just keeping it real today. I love putting chicken salad together it’s quick and easy. You can have it as a sandwich or a salad. I prefer mine as a salad and adding toasted almonds, and fruit. The easiest no-prep meal prep ever. Last weekend was insanely busy so I chose to clean the house over cooking (the amount of dog fur I vacuumed out of the carpets was scary!). I did manage to cook some brown rice in the instant pot and freeze it though. Paired with steamed broccoli and mini chicken wantons from @bibigousa and topped with my ever-handy homemade chili oil this was a perfect meal. Lemon Rice 🍋🌿 Ingredients : 5 - 6tbsp Oil 1/2tbsp Mustard Seeds 10 - 12 Curry Leaves 1/2tbsp Chana Dal 1tbsp Urad Dal 2tbsp Peanuts 5 - 6 Cashewnuts 2 Dried Red Chillies 2 Green Chillies Salt as per taste 1tsp Sugar 1tsp Turmeric Powder Juice of 2 Lemons 2 Cup Boiled Basmati Rice Method: 1. Heat Oil in a pan. Add mustard seeds and curry leaves. Allow them to crackle. 2. Add chana dal and urad dal. Cook till it turns slightly brown. 3. Add Salt and Sugar. Give it a Good mix. 4. Add peanuts and cashewnuts. Cook till cashews turn slightly brown. 5. Add turmeric powder. Stir for 10 - 20 secs. 6. Add lemon juice and mix well. 7. Add boiled basmati rice and mix well. 8. Creamy Sweet Potato Mash with Lightly Spiced Quails Eggs! . I’ve developed quite an obsession for sweet potato mash recently… with cheese and chives from the garden, in particular and sour cream, herbs and a drizzle of maple syrup is delish too! Here, I’ve baked them in their skins first and then mashed the insides with double cream and a little Parmesan. Topped with those pesky little quails eggs (🤣)… which to be fair are the perfect size for sitting nicely on top.
