MAKHWAEN PEPPERCORN l THAI SPICE l NORTHERN LARB SPICE The Makhwaen peppercorn มะแขว่น (Zanthoxylum limonella Alston) is a member of the citrus or Rutaceae family, and grows naturally in the mountainous forest regions of Northern Thailand, above 500m elevation. It is a relative of Sichuan pepper 花椒 (Zanthoxylum simulans / bungeanum) grown in SW China, and Sansho pepper 山椒 (Zanthoxylum piperitum) grown in Japan. While it is difficult to find outside of mainland Southeast Asia, Makhwaen is an important ingredient in many Northern Thai dishes, lending its citrus-like flavour and a mild numbing sensation to the complexity of Northern Thai flavour profiles. Samlor’s Makhwaen is sourced from small-holder farmers in Northern provinces. Our farmers sun-dry their pepper for approximately 14-20 days immediately after harvest. Sold locally still on the stem, we separate the peppercorn from the stem in Canada, before packaging. Haawm (pre-book via dm or email) . 🏡 Private home dining is not unique to this country. It has caught on in our neighboring countries too. . #Bangkok is one of them. While looking for one such place, a friend recommended @haawmbkk. As with most phd’s, #Haawm is HOT & in demand. So book early via dm. The great news is a minimum of one pax can request for a seat. I asked for two and was automatically enroled to an international table at #Thai- #American chef Dylan Eitharong’s home. And yes, Haawm is a play on “home” and it’s also Thai for “smells good”. . Expect classic family-style Thai recipe’s, some spicy heat and unfussy presentation from this chef’s table. Pink lights and retro classic music blast in the background. The home-based business owner cooks what he likes, and we’re not complaining. The tipping point here is the smoker. Who doesn’t like wok hey, amp’ed up? Here are the highlights of the shared meal. . 🫑 #Makhwaen or prickly ash is a relative of the #szechuan peppercorn. It is “tingly, numbing, and a little citrussy”. Chef grounded it with garlic, chili, palm sugar, tamarind & self-dried shrimps. Usually paired with meat, this sweet-sour-spicy relish was the topping on fresh rose apples. It definitely whet the appetite as there was a train of food en route. . 🍤 Plump and succulent tiger prawns were stir-fried in #curry paste with pork lard. It is commonly cooked with long beans, but Chef used “sator/sataw” or #petai beans instead. Chef boiled, dried and fried the “sator” or “stink” beans so the texture is a lil’ chewy yet crispy on the outside. Surprisingly, this was one of the more memorable dishes for me, largely because I shun petai. I just couldn’t stop munching on the textured beans! (It’s spicy!) . 🥥 Another mindblowing moment was the smoked beef soup that used brisket, basil, star anise and rock sugar in the broth. Young #coconut flesh was roasted (diggin’ the char). This was 👍🏻👍🏻👍🏻 . 🐟 Dig into Satun muslim curry that’s gaeng tor maeh. Satun is a Thai province that’s predominantly muslim, hence the influence on food.
