Bourbon washed from Santa Rita is a sure crowd-pleaser! We find it well rounded and classic coffee that brews a smooth cup with sensible but pleasant acidity, and medium body. Wonderful coffee to start your day! ☀️ This is our third year roasting coffees from Santa Rita by Carmen Silva. Santa Rita has been part of Carmen’s family for three generations. Located on the slopes of the still active San Miguel volcano the soil is great in nutrients but being on the actual cone of a volcano means there are no under ground water resources. Farming with limited access to water seems impossible and Carmen has mitigated the water scarcity by installing a rain water collection and irrigation system. Carmen has a strong dedication to sustainable farming practices and is permanently involved with the local community. She has specifically sought to train local women to be in charge of the key operations at the farm empowering them in usually male dominated industry. Our newest coffee from La Roxanita is sure to brighten your day! ☀️ This specific lot of pacamara was produced by Ignacio Gutierrez on his La Roxanita farm. This coffee lot was honey processed - the cherries were de-pulped after harvest, and then sun-dried in fruit mucilage for 21 days. Expect a tea like body with lots of fruit undertones and notes of chamomile, with a juicy mouthfeel. We 💛 this pacamara in both pour over and espresso! We recommend brewing this one for aeropress or pour over methods using 14:1 water to coffee ratio. For espresso, 18.5grams for double basket to make a bright and tropical feel espresso. Perfect coffee to enjoy outdoors soaking in the spring vibes, take a pause and appreciate each sip ☺️

DELICATE BEANS...This has to be the most complicated coffee that I have every brewed. If not done right it can either be too heavy or too acidic. Last week I was so ready to trash this bag of coffee...but changing the grind setting and dropping the brewing time to 3 minutes I enjoyed a very smooth, mellow, and delicious coffee. I am a little nervous about giving a go in a drip machine since it is not an average bean. If you like to mask your coffee with sweet creamers or syrup then I think this will be a perfect bean using traditional drip method. 🌟 NEW COFFEE 🌟 This Gesha washed quickly turned into one of our favourites for espresso, but also works for well for pour overs and all brew methods we have tried produce an amazing cup. We were waiting for another coffee that would offer a highly distinctive espresso profile and this is the one for us. Gesha washed has a dense, full body packed with caramelized sugar and molasses type sweetness. We also found a bright blackberry acidity that makes the espresso unforgettable. We used a 19.5g dose for double shots and ground a bit coarser than what we use for other varietals such as bourbons because of its density. Sip this one slowly and discover how the flavour layers change as the coffee cools down. This is an extremely limited release. We will only have about 50 bags for sale in store and through our website. We have lots more information about this profile online so check it out and scoop a bag up before it’s all gone!
